Pink Lemonade Pie for Valentine’s Day

I’m super excited to be sharing Valentine’s Week with you all! Along with some pretty amazing gals, Gina from The Shabby Creek Cottage, Kellie at Nest of Posies, Amy at The Idea Room, and Charlotte from The Paper Cupcake, each day will be fun filled with Valentine’s Day ideas and a special giveaway each day.

We are kicking it off with a sweet treat for your Valentine…Pink Lemonade Pie! It’s rich, creamy and a perfect little dessert to finish off a special dinner with your sweetie!

To make these adorable little individual servings, I pressed the Graham Cracker Crust into Wilton heart shaped silicone baking cups, but you could easily make a full pie.

Pink Lemonade Pie Recipe

Pink Lemonade Pie Recipe

Yield: 1 full size pie or 8-10 mini pies {with leftovers}
Prep Time: 15 minutes
Cook Time: 8 minutes
Total Time: 23 minutes

Ingredients

Graham Cracker Crust

  • 1 1/2 cups crushed graham crackers
  • 1/4 cup sugar
  • 4 tablespoons butter, melted

Filling

  • 1 {8 oz.} package cream cheese, soft
  • 1 {14 oz} can sweetened condensed milk
  • 3/4 cup pink lemonade concentrate, thawed & undiluted
  • 2 tablespoons lemon juice
  • 2-4 drops Pink Coloring, if desired
  • 2-4 tablespoons sugar, depending on your taste

Whipping Cream Topping

  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla
  • 1/4 cup powdered sugar

Garnish

Instructions

Crust

  1. Combine crushed graham crackers, sugar and melted butter
  2. Press mixture into heart shaped silicone baking cups, or pie plate
  3. Bake at 350 degrees for about 8 minutes or until golden brown
  4. Let cool completely

Filling

  1. Pour milk into large bowl, add softened cream cheese and beat until well combined
  2. Add pink lemonade concentrate, lemon juice and Pink coloring, mix well
  3. Spoon into cooled crust
  4. Freeze until firm

Whipping Cream Topping

  1. Pour heavy whipping cream in a large chilled bowl with chilled beaters
  2. Whip on medium speed until cream starts to thicken
  3. Add vanilla and beat on high speed
  4. When soft peaks form, gradually add powdered sugar
  5. Beat on high until stiff peaks form
  6. Add a dollop of whipping cream to pie
  7. Garnish as desired
