Harvest Bread Recipe

Bread baking is something I don’t do often, and honestly, I’m not quite sure why. Every time I bake a loaf, whether from scratch or in my bread machine, I fall in love with bread baking all over again. There is something exciting about putting together flour and yeast and creating a loaf of bread.

Recently I took on the Fleischmann’s challenge to take their Harvest Stuffing Bread and change it up. While it sounded delicious, since it’s December, I wanted to add some ingredients that would be perfect for this time of year and the holidays. So instead of the poultry seasoning and other spices, I added golden raisins, dried cranberries and pecans, and was thrilled with the outcome.
This Harvest Bread would make a wonderful Christmas gift as well, perhaps pair it with a jar of homemade apple butter or strawberry jam, place it in a basket with a pretty bow and you have a wonderful gift to show how much you care.
Harvest Bread Recipe
This comforting Harvest Bread goes together in a snap and is delicious.
Ingredients
- 3 cups flour, all-purpose
- 1 tablespoon sugar
- 1 envelope Fleischmann's® RapidRise™ Yeast
- 1 teaspoon salt
- 1 1/4 cups water
- 1 tablespoon butter
- 3/4 cup dried cranberries
- 1/2 cup golden raisins
- 1 cup pecans or walnuts, chopped
- 1 egg + 2 teaspoons water, beaten
Instructions
- Grease a baking dish - casserole, baking dish or cookie sheet
- In a large mixing bowl, combine 2 cups flours, sugar, and undissolved yeast, mix lightly
- In a small saucepan, heat water and butter until very warm (120 to 130°F)
- Stir water mixture into flour mixture, beat for 2 minutes on medium speed
- Stir in remaining flour and mix
- Fold in raisins, cranberries and nuts
- Cover and let rest for 10 minutes
- Turn batter onto greased pan
- Smooth top of dough with floured hands
- Cover and let rise in warm, draft-free place until doubled in size, about 30 minutes
- Beat egg and water and brush on top of bread
- Bake at 375 degrees for 35 minutes or until golden brown and crusty
- Remove from pan and cool on rack
