Double Chocolate Cupcake Bites

Did you all enjoy your long weekend? My plans to get my house organized and cleaned worked out pretty well, at least the main floor is done, and my office, with the most exciting project we have tackled in awhile {watch for the tutorial tomorrow}. The little bit of baking that was done, were these Double Chocolate Cupcake Bites. A little bite of heaven!

A few factors made them quick and easy…a) they are mini cupcakes, so they bake up faster and cool faster, b) they start with a cake mix and c) even though the ganache is homemade, it takes only minutes to make.

And the little sprinkle with white jimmies, white nonpareils and Snow Caps candy made them extra special! You could certainly bake in liners or also make them in different flavors.

Since I wanted them to be a quick bite of chocolate to pop in your mouth, I baked them without liners.

Double Chocolate Cupcake Bites

Double Chocolate Cupcake Bites

Prep Time: 5 minutes
Cook Time: 8 minutes
Total Time: 13 minutes

Ingredients

Cupcakes

  • Chocolate Cake Mix {your favorite, I used Devil's Food}
  • 4 eggs
  • 1 cup buttermilk {splash of vinegar in a measuring cup, fill with milk and let set a few minutes}
  • 1/3 cup oil

Ganache

  • 1 cup heavy whipping cream
  • 1 cup chocolate chips or chunks {bittersweet or semi-sweet works best}
  • 1 teaspoon vanilla

Decorations

Instructions

  1. Mix cake batter and bake cupcakes without liners in a mini cupcake pan for about 7-8 minutes
  2. Cool completely
  3. Meanwhile, in a large bowl, add the chocolate chips.
  4. In a small saucepan, heat the heavy cream to a boil, When the cream boils up to the top of the pan, remove from heat immediately and pour over chips.
  5. Stir carefully until combined, then whisk until very smooth
  6. Add vanilla and whisk again
  7. Cover the surface with plastic wrap and place in fridge about 5-10 minutes to cool down

Decorating

  1. Place a piece of wax paper or foil on a rimmed cookie sheet, add a cooling rack
  2. Place a cupcake on the cooling rack, drizzle ganache over cupcake and immediately add sprinkles, jimmies or Snow Caps
  3. Place in fridge to set about 5 minutes

  4. Yum! Chocolate ganache is simple yet so delicious! And since these are mini, I can eat twice as many 😉
