Fourth of July Dessert: Homemade Marshmallows Kabobs
When I first made Homemade Marshmallows for Christmas last year, I was surprised how easy they were. And how much better they taste too! I could hardly wait for another fun holiday, like 4th of July, to give them another try.
Such a fun treat! There is something about eating food from a stick that kids {and adults} love! Let’s gather our supplies…
4th of July Dessert: Homemade Marshmallow Kabobs
- Homemade Marshmallows {recipe below}
- Small star cookie cutter
- Powdered sugar to dip cookie cutter in
- Wilton Red & Blue Candy Melts
- Festive Sprinkles
- Skewers
- Non-stick cooking spray
- Wax Paper
- Strawberries & blueberries {optional}
- Buckets {optional, I found them at Walmart in the party section, $.97 each}
4th of July Dessert: Homemade Marshmallows Kabobs
Ingredients
- 2 tablespoons + 2 1/2 teaspoons unflavored gelatin ( I used almost 4 envelopes Knox brand)
- 1/2 cup cold water
- 2 cups sugar
- 1/2 cup cold water
- 1/2 cup corn syrup, light
- 1/2 teaspoon salt
- 2 large egg whites
- 1/2 teaspoon vanilla extract
Instructions
- Spray cookie sheet with cooking spray and set aside. In a large bowl, add 1/2 cup cold water and sprinkles gelatin on top. Set aside while you cook the sugar mixture.
- In a heavy saucepan, combine sugar, salt, 1/2 cup cold water and corn syrup. Cook over low heat, stirring constantly until the sugar is dissolved.
- Turn heat to medium and bring mixture to a boil, do not stir. Add a candy thermometer, and cook until mixture is 240 degrees, about 8-12 minutes
- Remove from heat and carefully pour mixture over the gelatin. Add vanilla. Beat on high speed until mixture triples in volume, and is thick and white.
- In a seperate bowl, with clean beaters, beat the egg whites on high speed until stiff peaks form. Fold egg whites into marshmallow mixture. Pour mixture into prepared baking pan.Smooth batter with a greased spatula.
- Place marshmallow, uncovered, in fridge and chill for about 3 hours or overnight.
- Cut with cookie cutter dipped in powdered sugar to prevent sticking. Or simply cut with a wet knife.

Since I was going to put the marshmallows on a skewer, I spread them into a cookie sheet with sides, making them a little thiner than usual.
For the kabob assembly…
- Melt candy melts in microwave, add a little oil to thin if you need to. Dip marshmallow in chocolate, place on wax paper.
- Add sprinkles immediately if you want.
- Let dry about 5 minutes
- Spray the skewer with a little non-stick cooking spray. This allows the sticky marshmallow to slide right on.
- Thread skewer with marshmallows and fruit
I think these would also work well for a birthday celebration. Just change the shape of the cookie cutter and the color of the candy melts.
