Are you enjoying all the fun ideas for Rainbow Week? I hope so…because I’m having a blast creating them for you! From the Mantel…to cupcakes…to a wreath…and now…Mini Funfetti Sandwich Cookies…the Rainbow fun continues!
These cookies are similar to Whoopie Pies, but since I didn’t use a traditional whoopie pie filling, I didn’t think I should call them that. Whatever they are called…I think they are so cute…and yummy, of course!
The cookies are made with 3 simple ingredients…a Funfetti Cake Mix, butter and 1 egg and they are filled with brightly colored Buttercream Frosting, in colors of the Rainbow. And we can’t forget the sprinkles…lots of sprinkles!
On Monday I shared with you the “Lucky” Printable Banner for decorating, now I’m SUPER excited to show you the printable for tomorrow’s Cupcake Chronicle Newsletter…
Isn’t it the cutest thing ever?? I know…I say that every month! But, Charlotte from The Paper Cupcake does amazing work!! AND, there are TWO sets of Bunting Flags…one that says “Lucky” on them for St. Patrick’s Day and the other is Rainbow Colors…Charlotte is just AWESOME like that!
I can almost hear the wheels turning! I know you all are coming up with Rainbow Party ideas! If you are not a subscriber to Cupcake Chronicles Newsletter…you can read all about it and subscribe HERE! If you subscribe after, Friday, March 9th, please leave me a comment on this post and I’ll send the printables to you!
