Back to School Dinner
Do you cook a special meal for your kids before they head back to school?
Our boys start school next week…where did the summer go? We were super busy, and didn’t get our fun list completed, but we still had a great time! So, instead of cooking a Back to School Meal to remind the boys of school, we decided to cook some of the food that reminds us of the fun we had during the summer.
Mini Corn Dogs, Curly Fried Potatoes, Grilled Sweet Corn, Red Cream Soda and Mini Apple Spice Cupcakes were on the menu.
Reminding us of all the baseball games we went to, the mini corn dogs are super easy and fast to cook. Doug loves the Curly Fried Potatoes at our County Fair. We used the Apple-Peeler-Corer-Slicer, mine is from Pampered Chef, it not only makes Apple Pie Baking a breeze, the curly fries turned out great too. Just wash the potatoes, place on the prongs, turn the handle and you have instant curly fries. Pat dry with paper towel and fry in 350 degree oil. Drain on a paper towel and sprinkle with salt.
We added the Grilled Sweet Corn because with all the fried food, we needed some veggies and it also reminds us of our trips to the Farmer’s Market in Sawyer, Michigan.
The Red Cream Soda…well, that’s another story. Let’s just say, it involved one 14 year old boy, 100 degree hot day and a tire swing at the playground. I will spare you the details.
Back to School Cupcakes with candy apples were the reminder that school is close. Be sure to visit tomorrow, for Cupcake Tuesday, I will have a video showing you how to make the apples too.
The mini size is perfect for lunchboxes too. I actually liked them better without the frosting myself.
Mini Corn Dogs
A fun treat for the kiddos, and easy on the wallet. Mini Corn Dog recipe from HoosierHomemade.com
Ingredients
- Hot Dogs
- Skewers {found near the kitchen gadgets at Walmart}
Batter
- 1 cup flour {a little more if the batter is thin}
- 1/4 cup sugar
- 2/3 cup corn meal
- 1 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 1/4 cup buttermilk {To make Buttermilk add 1 tablespoon in measuring cup, fill with milk, let set for a few minutes}
- 1 egg, beaten
Instructions
- Whisk together dry ingredients
- Add buttermilk and egg, beat well
- Add a little flour if the batter is thin
- Heat oil in heavy pan to 300-350 degrees
- Cut hot dogs in half and add to skewer
- Pat dry with paper towel
- Dip in batter, let excess drip off
- Fry in hot oil, turning until batter becomes puffy, then spin skewer so the corn dog cooks evenly
- Cook for about 15 seconds or until golden brown
- Serve with ranch dressing and spicy brown mustard whipped together

I simply LOVE how you put the mini corn dogs on long sticks!
Love the idea of a special dinner to celebrate! Though a great breakfast might be more motivating for my sleepy kid!
