Easter Doughnut Pops

Is it just me or are you all in shock that it’s almost Easter? I really can’t believe where the time goes. There are lots of fun Easter Treats on my list…I just hope I have time to share them with you. So let’s get started…Easter Doughnut Pops…

I started with one of my favorite Doughnut Recipes that I used for Cherry Doughnuts for Valentine’s Day, and simply left out the cherries and traded Almond Extract for the Vanilla. Using a very small amount of batter in my Wilton Mini Doughnut Pan, topped with a little Vanilla Glaze and sprinkles and the finishing touch…a Bunny Peep.

Almond Doughnuts with Vanilla Glaze Recipe

Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients

Doughnuts

  • 2 cups flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 2 eggs
  • 1 teaspoon almond extract
  • 3/4 cup milk
  • 2 tablespoons butter, melted

Glaze

  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2-4 tablespoons heavy whipping cream

Instructions

Doughnuts

  1. Preheat oven to 325 degrees
  2. In a large bowl, combine dry ingredients; flour, sugar, baking powder, baking soda, salt and nutmeg. Whisk together until combined.
  3. Add eggs, melted butter, vanilla and milk. Mix well.
  4. Place a large resealable bag in a tall glass and fill bag with batter, close tightly.
  5. Snip off corner, pipe batter into doughnut pan.
  6. Fill only 1/2 full, making sure not to cover the inside hole with batter.
  7. Bake for 8-10 minutes, cool completely.

Glaze

  1. Add powdered sugar and vanilla to small bowl, gradually add cream a little at a time until desired consistency.
  2. Frost doughnuts or hold upside down and dip, immediately add sprinkles
  3. Place on wax paper until glaze is set

Easter Doughnut Pops

  1. Add a Peep to the top of a wooden lollipop stick
  2. From the bottom, add the doughnuts

Liz says...
I love the mini doughnuts, but you can certainly use this recipe in any doughnut pan. If you don't have a doughnut pan, you can try baking them in a muffin tin, but I think a doughnut pan is well worth the money {usually less than $10}
