Apple Cupcakes with Cream Cheese Caramel Frosting

All week long I will be sharing yummy Apple Recipes as part of my Apple Daze. One of our families favorite things to do in the Fall is go apple picking. Even though the boys are all teenagers, they still love going. Or maybe it’s just the cider and donuts that draws them in.
Yesterday I shared Pumpkin Whoopie Pies that I added apples to, they are amazing! And filled with the Cream Cheese Caramel Filling…even better.
These Apple Cupcakes are a perfect Fall treat. You can leave the frosting off and have a great muffin for breakfast too. This recipe came originally from a Better Homes and Gardens booklet, Hometown Cooking from October 1999 issue. The whole booklet is filled with delicious recipes including lots of apple recipes. The recipe was for a layered cake, so I cut it in half and made the cupcakes. I have listed the ingredients I used, but you can certainly double the recipe and make the cake as well. And you don’t even have to get your mixer out for these, I just stirred them together with my spatula.
The apples are a new variety called Sweet Tango, and will be available at Walmart. More on those later in the week! I added a sprinkle of nuts and a drizzle of caramel to make them a little extra special.

Apple Cupcakes with Cream Cheese Caramel Frosting
A moist and dense cupcake filled with apples and topped with a delicious Cream Cheese Caramel Frosting. Recipe from HoosierHomemade.com
Ingredients
Apple Cupcakes
- 2 cups apples, cut thinly and chopped finely
- 1 cup sugar
- 1/4 cup oil
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 cup walnuts, chopped
Cream Cheese Caramel Frosting
- 3 oz cream cheese, softened
- 1/2 cup butter
- 1/3 cup caramel ice cream topping
- 1-2 cups powdered sugar
Decorations
- Chopped Nuts
- Caramel Ice Cream Topping
Instructions
Apple Cupcakes
- Preheat oven to 350 degrees
- Fill muffin tin with cupcake liners {this recipe made 16 regular size cupcakes}
- In a large bowl, combine the apples and sugar
- Add oil, eggs and vanilla.
- Combine the dry ingredients, whisk slightly
- Add dry ingredients to wet ingredients
- Stir together just until combined
- Stir in nuts
- Fill cupcake liners about 2/3 full {these cupcakes don't rise a lot}
- Bake for 20 minutes or until a toothpick comes out clean
Cream Cheese Caramel Frosting
- Beat together cream cheese and butter until fluffy
- Add the caramel topping and mix well
- Gradually add the powdered sugar until desired consistency
- Fit a decorator bag with giant round tip, fill with frosting
- Pipe on frosting, sprinkle with nuts and a drizzle of caramel

Seriously, these are some of the most AMAZING cupcakes I’ve ever had!!!! I used fuji apples and tinted the frosting pink for Valentine’s Day. These aren’t going to last long in this house, that’s for sure. Thanks for the amazing recipe!
