Pancake Breakfast for a Sleepover
Hosting a Sleepover? Love serving a fun weekend breakfast? This delicious Pancake Breakfast is easy to create!
Almost every weekend when I was growing up, I would have at least one girlfriend to sleep over, sometimes even several girls would stay. Thinking back on that time, and being a Mom myself, it seems like a lot. However, there were several factors – first and foremost, I had the best Mom in the world, secondly, times were different back then, there weren’t the distractions that kids have now with video games and computers. And lastly, I basically grew up by myself, my sister that was closest in age to me, was out of the house before I was 10 years old. So I’m pretty sure that my parents filled my time with friends, making fun for me and probably easier on them.
My Mom often made us a huge Pancake Breakfast the morning after our sleep over. She would make Homemade Pancakes and serve lots of different toppings and usually fruit too.
Over the years, we have kept the tradition of her Pancake Breakfast going with our Old Fashioned Homemade Pancakes. Our family loves many different toppings including Nutella®. So today, we have put together a fun breakfast for you in celebration of International Pancake Tuesday on February 17th. and the “Spread The Happy” campaign!
This Pancake Breakfast is perfect for a sleepover, fun weekend breakfast or even breakfast for dinner! It starts with Silver Dollar Pancakes, you can of course, make regular size pancakes, but I think the mini pancakes make the perfect little sandwich filled with Nutella® and fruit.
Along with the pancakes, we are serving fruit – red raspberries, blueberries, black raspberries and bananas.Nutella®, which first came to the United States from Italy over 25 years ago, is made of roasted hazelnuts, skim milk and a hint of cocoa. It makes a delicious base for the fresh fruit and also perfect in the mini pancake sandwiches.
To add even more fun, we added nonpareil sprinkles to the rim of shot glasses to serve milk. Simply dip the edge of the glass in water and then into the sprinkles. I added the sprinkles to a paper plate to make it easier to dip and also great for a quick clean up.
And as an added bonus, a little powdered sugar for a dusting to make the pancakes sparkle.

Silver Dollar Pancakes
Create this fun and delicious Mini Pancake Bar - it's perfect for a Sleepover or Birthday Party! Even a fun weekend brunch!
Ingredients
Dry Ingredients
- 1 cup flour
- 1 tablespoon sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
Wet Ingredients
- 1 egg
- 3/4 cup milk {a little less or a little more is fine depending on the consistency you like}
- 2 tablespoons oil
Instructions
- In a large measuring cup, whisk together dry ingredients
- Add wet ingredients and mix well
- Heat griddle and spray with non-stick cooking spray
- For Silver Dollar (mini) Pancakes add 1 tablespoon of batter to hot griddle
- Cook until golden brown, about 2-3 minutes, flip and cook other side about 1-2 minutes or until golden brown
Sleepover Pancake Breakfast
- Pancakes
- Nutella® Hazelnut Spread
- Fresh Fruit – bananas, raspberries, blueberries, strawberries, whatever you like
- Powdered Sugar for dusting
- Milk served in glasses rimmed with sprinkles
