Apple Cake: Secret Recipe Club
It’s that time again…time for Secret Recipe Club! This month has just flown by, seems like I was just baking the Pumpkin Icebox Pie from last month’s secret blogger. Today my secret blogger is Julie from Little Bit of Everything, and she is from the Midwest, just like me! I enjoyed browsing around Julie’s blog, checking out her new home, traveling adventures and oh yes…she bakes cupcakes!
But when I happened upon this Apple Cake, I knew right away I wanted to bake it. Mostly because it sounded delicious, but also I remembered an Apple Cake that my Mom used to make years ago.
It was a perfect addition to the Thanksgiving Leftover Party. Guests are usually tired of Pumpkin Dessert after Thanksgiving, but the Apple Cake still has the Fall flavors that we all love around the holidays.
I changed the recipe a bit and had enough batter to bake the cake a couple different ways, in these cute little individual bundt pans and also in a regular size bundt pan, both gave it a beautiful shape, plus it was easy to cut and serve.
The larger cake was definitely a show stopper on the Thanksgiving Buffet! I served the larger cake with Cinnamon Whip Cream and glazed the smaller Apple Cakes with Brown Sugar Glaze. Both were delicious, and actually were better the second day, making this a great make-ahead cake as well.
Apple Cake Recipe

Ingredients
Cake
- 3 eggs
- 1 cup white sugar
- 1 cup brown sugar
- 1 1/2 cups oil
- 2 teaspoons vanilla
- 3 cups flour
- 1 teaspoon soda
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 cup chopped pecans or walnuts
- 3 cups diced apple
Cinnamon Whip Topping
- 1-2 cups Cool Whip Whipped Topping or fresh whipping cream
- 1-2 teaspoons cinnamon
Brown Sugar Glaze
- 1 cup brown sugar
- 4 tablespoons butter
- 1/4 cup milk
Instructions
Cake
- Preheat oven to 350 degrees and spray pan with non-stick cooking spray and dust with flour
- Cream together eggs, sugars, oil and vanilla until well combined
- Sift together dry ingredients
- Add dry ingredients to wet ingredients just until combined
- Fold in nuts and apples
- Fill baking pan {Bundt, Layer, Loaf, or even cupcakes} about 3/4 full
Baking times
- Regular Size Bundt: 45 - 60 min
- Individual Size Bundt: 20 - 30 min
- Layer: 30 - 45 min
- Loaf: 45 - 60 min
- Cupcakes: 18-20 min
- Test all with a toothpick, times may vary a bit
Cinnamon Whip Topping
- Combine whipped topping and cinnamon
- Serve on top of cake or on the side
Brown Sugar Glaze
- In a small saucepan, combine all ingredients
- Cook until slightly thick, about 4 minutes
- Brush on warm cake
