Kentucky Derby Cupcakes
With the Kentucky Derby this weekend, I thought it would be fun to make some cupcakes to celebrate the race for Cupcake Tuesday.

I wanted to make Mint Julep Cupcakes, but wanted to keep it kid friendly, (mint julep has bourbon in it) so, I started with this amazing white cupcake recipe from MomAdvice. Instead of the vanilla, I put a little peppermint extract into the mix. I used chocolate gold coins to decorate the tops. I wasn’t able to find any mini horses to put on top, so I used a larger one. My original plan was to make a fancy hat to put on top of the cupcake, but I have to be honest, they didn’t turn out very well.

I baked the cupcakes, then frosted them using this Buttercream Frosting from The Farm Chicks that I found through MomAdvice, and her post on making cupcakes from scratch. I added a bit of peppermint extract to the frosting as well.
I also had a Pampered Chef Party, so I used part of the cupcakes to serve to my friends, who thought they tasted great. I decorated them with white sprinkles and Andes Mint Chocolate Bits.

You could make these for any occasion, just by changing the color of frosting and adding different decorations to the top of the cupcake.

Two of my favorite recipes- those look delicious! We did a Kentucky Derby themed Bunco last year and tried Mint Juleps. We all had one sip and threw it away. I like this version much better
I also LOVE Pampered Chef- hope you got some good loop. I would be nothing without that great stoneware!

Yum! I can’t say the Derby really does much for me, but living in Louisville, I do love all the mint julep-flavored goodies around town this time of year.
