Today, I’m sharing, what else? Party Cupcakes!
Last week, a good friend of mine asked me to bake a cake and some cupcakes for her Mother-In-Laws birthday party. The only request, purple or lavendar. Here’s a sneak peak at the cake, I will share the decorating details in another post. But, just had to show you how great it looked, especially with the pretty cupcakes.
But we aren’t here for cake, we are here for cupcakes!
I started with this yummy white cake recipe that I found over at Cooking During Stolen Moments. The cake is light and fluffy, and really moist. Part of the reason for that is the egg whites that are beat seperately till soft peaks form and then folded in.

and after. It only took a couple minutes and made all the difference in these cupcakes.
They would have been great plain, but I wanted to jazz them up a little for the birthday party. So I filled them with vanilla pudding mixed with whipped topping and a little strawberry preserves. To learn how to fill cupcakes, head over here.
I frosted them with Buttercream Frosting, some of them I used lavendar to match the cake.
And some I frosted with white Buttercream and topped with a strawberry that I dipped in chocolate.

Can you believe I’ve not yet made cupcakes in my entire life? I have made muffins (it’s not the same is it?) but not cupcakes.

Hey,
It is snowing today. I thought I would try to make these cupcakes and everything was good until I did the icing. How do you get yours to come out like that? My icing was way to soft to try to decorate anything with. I used it to put a little icing on cherry turnovers, But I have a bowl full still.

@nancy, How much butter did you start with and how much powdered sugar? I add about 4 cups of powdered sugar for 1 cup of butter, a little milk and a little vanilla, maybe 4-6 tablespoons milk, a little at a time and about 1 tablespoon vanilla.
