Valentine Cupcakes:Cupcake Tuesday

I just LOVE Valentine’s Day…next to Christmas, it’s my favorite holiday to bake for. The options are endless, from quick and easy to difficult and time consuming. You all know I love to create impressive looking desserts, that are easy and don’t take lots of time.

These Valentine Cupcakes are exactly that! Impressive looking {I think} but quick and easy!

Won’t your sweetie be so impressed when you bake these to finish off your romantic dinner together?!

Back in August, I told you about my trip to the Betty Crocker Test Kitchens. Every once in awhile they surprise me with a little package in the mail, and last week I received a few of their new desserts.

I used the Decadent Supreme Cake Mix, it’s a chocolate cake mix with chocolate mousse. Here’s what you will need…

Ingredients

Cupcakes

  • Betty Crocker Decadent Supreme Cake Mix {or other chocolate cake mix}
  • Eggs, Buttermilk and Butter {learn how I make a cake mix taste like it’s from scratch }
  • Chocolate Mousse packet plus milk {comes with the cake mix}
  • Maraschino Cherry Filling {recipe below}

Filling

  • Maraschino cherries {10 oz jar} chopped
  • 1/2 cup maraschino cherry juice
  • 2 tablespoons corn starch
  • 1/3 cup sugar
  • 1 tablespoon butter {I used I Can’t Believe It’s Not Butter}

Instructions

Cupcakes

  1. Mix cake according to directions on the box. I baked them at 350 degrees for about 10 minutes, either check with a toothpick to make sure they are done, or by touching and make sure they spring back.
  2. After they cooled completely, I used a butter knife and gently released the cake from the side of the cup.
  3. Make the Chocolate Mousse according to the directions on the box.
  4. Put the mousse in the fridge while you are making the cherry filling.

Filling

  1. Drain the cherries, you will use all the juice, chop the cherries. {I chopped them pretty fine because I wanted them smaller for the cupcakes}
  2. In a small saucepan, combine the sugar and corn starch, gradually add the juice, cook and stir until the sugar is dissolved.
  3. Add the chopped cherries.
  4. Heat until boiling, cook until mixture is thick, remove from heat and add the butter.
  5. Cool completely. {I stuck mine in the fridge because I was in a hurry}

Assembly

  1. Turn cupcakes over so that the bottom is up. {you can use either side, I just thought the bottom had better shape}
  2. Add a heaping teaspoon of mousse and then a small amount of cherry filling.

I baked mine in these cute little Heart shaped Silicone Baking Cups from Wilton.

I typically buy cherry pie filling, but I recently saw this recipe on Barbara Bakes. If you love to bake {of course you know I do}, you MUST pay her a visit! She has amazing recipes!

Here is another yummy option in case you don’t have the Heart Shaped Silicone Baking Cups…

Bake cupcakes in regular liners, remove from liner, slice in half, fill with mousse, top with cupcake. Add more mousse and cherry filling.
