Thanksgiving Desserts and Pumpkin Cheesecake Mini Trifle

Trifles, in my opinion, are the easiest most inexpensive dessert you can make….they can be made ahead, the ideas are endless and most importantly they look like you spent hours on them, when it really only takes you less than 15 minutes. These Pumpkin Cheesecake Mini Trifles are perfect for Thanksgiving,  but you could certainly make them for Christmas or even a special get-together.

I think using unusual containers adds to the creativeness of the Trifle. These Pumpkin Cheesecake Mini Trifles are served in glass votive candle holders that we found at Goodwill.

Pumpkin Cheesecake Mini Trifle Recipe

Pumpkin Cheesecake Mini Trifle Recipe

Total Time: 10 minutes

A super easy but very impressive dessert. Recipe from HoosierHomemade.com

Ingredients

  • 1 small box instant Cheesecake Pudding
  • 2 cups milks
  • 1/4 cup pumpkin {not pumpkin pie filling}
  • 1 teaspoon Pumpkin Pie Spice
  • 1 cup Cool Whip Topping or Whipping Cream
  • 2 Cinnamon graham crackers, crushed finely

Instructions

  1. Mix cheesecake pudding and milk with whisk
  2. Place in fridge until set, about 5 minutes
  3. Fold in pumpkin and spice, whisk until smooth
  4. Place in fridge another 5-10 minutes to set
  5. Layer pumpkin cheesecake, Cool Whip and crushed graham crackers
  6. Fit a decorator bag with a Giant Round Tip and pipe on a dollop of Cool Whip on top, sprinkle on graham cracker crumbs

    1. Hi Suzanne, You can make the layers 1-2 days ahead, but I would assemble them the day you are going to serve them. The graham cracker layer will get soggy.

  3. This did not work at all. I have no idea why though. The cheesecake was just liquid. It was disgusting. Also you could not taste the pumpkin at all.

    1. I’m sorry you had trouble. I have never had that happen before. Was the box of pudding instant or cooked, it should be instant pudding mix.

  4. This recipe does not say how many servings it makes. Since each cup is one individual dessert, that would be most helpful. I can’t tell if one recipe will be enough for Thanksgiving.

    1. Hi Lois, the number of servings will depend on the size of your container. It will make enough for 8-10 people using a small (like 3 oz) container.
