Stars and Stripes Pie

Are you tired of all the Fourth of July goodies around here? I hope not because we have a few more days left before we wrap it all up. Today is all about pie…Stars and Stripes Pie to be exact! Now I have to confess, I’m not much of a pie baker, not that I don’t enjoy whipping up a pie for a special occasion, I just don’t bake pies very often, so I’m a little out of practice.

But I’ll have to say, this Stars and Stripes Pie is easy enough even for the novice pie baker, like myself. Store bought pie crust and canned pie filling are the basis for this Fourth of July Pie, and with a few little extra special touches, it turned out very festive.

My first plan was to bake individual Stars and Stripes Pies, but after getting out all the ingredients, I couldn’t find the size of mini pie plate in my cupboard. Don’t you hate when that happens? I think gremlins eat my bakeware sometimes.

I first spotted the Stars and Stripes Pie on Pinterest, and then found the recipe on Woman’s Day website. Let me show you how I created the Pie…

The trick to separating the Blueberry and Cherry Pie Fillings is a simple 6 inch piece of cardboard, just folded in half. After you roll out your pie crust, place it in your pie plate, leaving the edges hanging over. Place the cardboard in the pie and fill with Blueberry Pie Filling and then the Cherry. Remove cardboard.

Then it’s time to get the Stars and Stripes ready. Roll out the other pie crust. Using a pastry wheel, or like I did a tracing wheel from my sewing basket {because once again, the gremlins ate my pastry wheel} and cut five – 1/2 inch strips around in a circle. With the remaining dough, cut out stars with a cookie cutter, I used two different sizes.

Now it’s time to add the Stars and Stripes, using a pastry brush, add the egg wash and a sprinkle of sugar to the strips of pie crust. Place a long piece across the middle first, then add the other stripes and the stars, be sure to add the egg and sugar before placing them on the pie.

For the edge, brush with egg and add strips of pie crust, twisting as you go and attaching with egg wash. After it’s all on, brush with egg wash on top and add a sprinkle of sugar. Then it’s off to the oven.

Stars and Stripes Pie

A special pie for Fourth of July or Summer Cookout. Recipe from HoosierHomemade.com. Adapted from Woman's Day

Ingredients

  • 1 box refrigerated ready-to-use pie crust or make your own
  • 3 cans {21 oz each} cherry pie filling - I used about 2 1/2 cans
  • 1 can {21 oz} blueberry pie filling - I used about 1/2 can
  • 1 large egg, slightly beaten
  • 3 tablespoons sugar

Supplies

  • Pie Plate
  • Rolling Pin
  • Pastry wheel, tracing wheel or small knife
  • Pastry brush
  • Star cookie cutter
  • Foil to prevent over browning of crust
  • 6 inch piece of clean cardboard

Instructions

  1. Roll out pie crust and place in pie plate, let extra hang over edge, prick bottom of crust
  2. Fold cardboard in half and place in pie crust at the 9 and 12 o'clock positions
  3. Spoon blueberry pie filling into small area and then spoon in cherry pie filling
  4. Roll out another pie crust, using a pastry wheel or knife, cut five 1/2 inch strips
  5. Cut out stars with remaining crust
  6. Brush strips with beaten egg and sprinkle with sugar
  7. Place on pie starting in the middle
  8. Add stars after brushing with egg and sprinkling with sugar
  9. For the edge, twist strips of pie crust and attach with egg, prick with fork or use your favorite edge technique
  10. Brush with egg wash and sprinkle with sugar
  11. Place pie on cookie sheet lined with foil {in case of spills}
  12. Wrap edge of pie with foil to prevent over browning
  13. Preheat oven to 425 degrees
  14. Bake pie for 25 - 30 minutes, reduce heat to 350 degrees and cook for an additional 30-40 minutes or until crust is brown and filling is bubbling
  15. Serve with whipped topping if you like

    I think pies are one of the simplest desserts to make. Non-bakers always seem in awe of pie, when really it is not hard at all. I love this one–it is gorgeous!
