Happy Tuesday! I hope this finds you all well! Did you read my exciting news yesterday? All this week, I’m working on my very first eBook…a Cupcake eBook…of course! Yay!! I’m super excited!! I have been dreaming up ideas for it for months, now is the time for me to get to work.

I’m taking a little break this week from the computer, so I can create the cupcakes, but I do have a yummy cupcake for you today…

Snickerdoodle Cupcakes with Snickerdoodle Cookies!

With cinnamon flavor cake and fluffy frosting and a sprinkle of Snickerdoodle Cookies, these are a perfect Fall treat or even an after-school snack. I started with Amy’s recipe, changed it up a bit and added my own easy version of frosting. I used my favorite recipe for Snickerdoodle Cookies, they are soft and have the perfect amount of cinnamon.

Snickerdoodle Cupcakes

Snickerdoodle Cupcakes

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

Snickerdoodle Cupcakes

  • 1 cake mix {yellow, white or butter flavor}
  • 1 cup buttermilk {1 tablespoon + milk to fill 1 cup}
  • 1/2 cup {1 stick} butter, melted
  • 4 eggs
  • 1 teaspoon vanilla
  • 2 teaspoons cinnamon

Fluffy Frosting

  • 1 cup butter, softened {I use I Can't Believe It's Not Butter}
  • 3-4 cups powdered sugar
  • 1 cup marshmallow fluff
  • Splash of vanilla
  • Milk to thin if needed

Instructions

  1. Preheat oven to 350 degrees
  2. Fill muffin tin with cupcake liners
  3. Combine all ingredients until well blended.
  4. Fill cupcake liners about 2/3 full {I use about 1/4 cup}
  5. Bake for about 20 minutes or until a toothpick inserted comes out clean.
  6. Cool completely

Frosting

  1. Beat butter until smooth
  2. Gradually add powdered sugar
  3. Add marshmallow fluff and vanilla
  4. Beat until smooth
  5. Add milk if the frosting is too thick
  6. Fit a decorator bag with a giant round tip, fill with frosting and pipe on.
  7. Add a cookie or sprinkle cookie crumbs.

  1. These look sooo good. I can`t wait to try making them. One question about the frosting, will it hold up for a day or two or does it need to be done the day you`re serving?

    1. Hi there, you can certainly make the frosting ahead and keep it in the fridge, but I would frost the cupcakes the day you plan on serving them.
