Mixed Berry Pavlova for Easter

With a soft pillow of meringue on the bottom, and topped with fresh sweet whip cream and mixed berries, Pavlova is a perfect Easter Dessert. Pavlova is believed to be named after the famous Russian ballet dancer, Anna Pavlova. And is a very popular dessert in Australia and New Zealand.

You all know I love creating desserts that look like you spent a ton of time and effort, but actually are very easy. This Mixed Berry Pavlova is just that kind of dessert…easy but impressive.

Ingredients

Pavlova

  • 4 extra large egg whites, room temperature {place them in a bowl of warm water if you need to use them quickly}
  • pinch of salt
  • 1 cup sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon white wine vinegar
  • 1/2 teaspoon vanilla extract

Sweetened Whipping Cream

  • 1 cup heavy whipping cream
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract

Mixed Berry Sauce

  • 1 cup mixed berries {I used frozen}
  • 1/2 cup sugar
  • 1/4 cup water
  • 2 teaspoons cornstarch
  • 1 teaspoon raspberry jam

Instructions

Pavlova

  1. Place parchment paper on a cookie sheet, and trace a 9 inch circle. Flip paper over so the pen mark doesn’t get on the meringue.
  2. Preheat oven to 180 degrees
  3. Seperate eggs and put whites in large mixing bowl.
  4. Beat about 1 minute at medium speed, add salt.
  5. Continue to beat until soft peaks form. Gradually add the sugar and beat until stiff peaks form. How to make Meringue Video
  6. Sprinkle meringue with cornstarch, add vinegar and vanilla. Fold in gently.
  7. Mound meringue on parchment paper, smooth out carefully.
  8. Place meringue disk in oven and bake for about 1 hour. The outside will have a crust on it.
  9. Turn off the oven and leave the meringue in for another hour
  10. Remove from oven and let cool

Sweetened Whipping Cream

  1. Place cold whipping cream in a large bowl, beat on medium high for about 2 minutes, add sugar. Continue to beat until stiff peaks form. Add vanilla.
  2. Add whipping cream to the top of the meringue.

Mixed Berry Sauce

  1. In a heavy saucepan, combine 1 cup berries, sugar and water.
  2. Bring to a boil, reduce heat and simmer for 3-4 minutes.
  3. Add cornstarch and raspberry jam, mix in.
  4. Carefully add berry mixture to the food processor and pulse.
  5. Add mixed berries to the middle of the whipping cream, and drizzle with sauce.

  1. This sounds so good! I’ve wanted to try a pavlova for awhile, but they look so intimidating. You make it sound so easy. I need the courage to try this one day. Yum!

  2. what are the nutritional stats of the original Pavlova? I have to eat heart healthy foods and this sounds like it may be high in cholesterol. would egg substitutes work just as well? the idea sounds so yummy.

  3. We LOVE Pavlova in our house. I like to get the pastry cream from King Arthur Flour and make it according to the directions (very,very easy) and add lemon extract or lemon juice to the pastry cream. Bake Pavlova as normal then add a layer of the lemon pastry cream, then a layer of whipped cream, and finally completed with a layer of blueberries. YUMMY!!!

    Add chocolate to the meringue and add dark chocolate shavings atop of the whipped cream for a chocolate version. The possibilities are endless.

    I was going to do coconut cupcakes for Easter but now you have me thinking!!!
