Island Mango Grilled Chicken

We have been grilling like crazy lately! Even though our temperatures have cooled down a bit this week, which is great because Nick has Football practice twice a day, we still love the flavor of grilled chicken.

I have shared several recipes from World Harbors and Nakano Rice Vinegars. And I will have to say, this Island Mango Grilled Chicken is by far my favorite so far! Marinating meat not only gives it a great flavor but also tenderizes it too.

This World Harbor Island Mango marinade  gives a refreshing mango sensation that will take your taste buds on a tropical journey! World Harbor also makes a variety of marinades including; Maui Mountain Sweet n’ Sour, Asian Style Cheriayaki and Mexican Style Fajita, just to name a few.

Doug likes to butterfly the Chicken Breasts, making them cook more evenly and also cuts down on the toughness of the chicken. We buy the family pack chicken breasts at Walmart, they are only $1.78 per pound, but sometimes they can be a little tough. By spending a few more minutes to butterfly the chicken, makes a huge difference.

To butterfly the chicken use a sharp knife, taking each breast and cut down the middle, lengthwise. Be sure not to cut all the way through the chicken breast, then lay flat.

For the marinade, place chicken in a plastic container that seals well, or a ziploc bag. Pour World Harbor Island Mango or other marinade over the chicken or other meat, place in fridge for at least 30 minutes. Discard marinade and grill.
