Homemade for the Holidays: Homemade Marshmallows

Welcome to Homemade for the Holidays! The time has come, Christmas is almost upon us! Crunch time is here! Are you ready?

We only have 1 more day left in this series, I hope you have enjoyed it as much as I have enjoyed putting it together for you.

Today, I’m sharing Homemade Marshmallows! Yum!! I have had these on my “to-do” list for at least 3 years! Way before I ever dreamed of blogging, I used to watch Martha Stewart and be amazed at the treats she created! I first saw her Homemade Marshmallows and thought it would be so cool to be able to make them. Well, little did I know, a few years later, and because of the inspiration I find from fellow bloggers, like Katie from GoodLife{eats} and Sara at Our Best Bites and of course, still Martha, I have can cross Homemade Marshmallows off my list!! Woohoo!

For now…at least…next time I would love to try these Raspberry Swirl Marshmallows that Mowielicious made…aren’t they a work of art?

Enough babbling…on with the Marshmallows…

I used Katie’s recipe and adapted it a bit {notes below}

Homemade Marshmallows Recipe

Homemade Marshmallows Recipe

Prep Time: 20 minutes
Total Time: 20 minutes

Homemade Marshmallows are much easier than you think and the difference in taste is unbelievable. Recipe from HoosierHomemade.com

Ingredients

  • 2 tablespoons + 2 1/2 teaspoons unflavored gelatin ( I used almost 4 envelopes Knox brand)
  • 1/2 cup cold water
  • 2 cups sugar
  • 1/2 cup cold water
  • 1/2 cup corn syrup, light
  • 1/2 teaspoon salt
  • 2 large egg whites
  • 1/2 teaspoon vanilla extract
  • 2/3 cup powdered sugar (plus a little to roll marshmallows in)
  • Almond Bark or melting chocolate (optional)
  • crushed candy canes (optional)
  • Sprinkles (optional)

Instructions

  1. Spray 13x9 baking pan with cooking spray and set aside.
  2. In a large bowl, add 1/2 cup cold water and sprinkles gelatin on top. Set aside while you cook the sugar mixture.
  3. In a heavy saucepan, combine sugar, 1/2 cup cold water and corn syrup. Cook over low heat, stirring constantly until the sugar is dissolved.
  4. Turn heat to medium and bring mixture to a boil, do not stir. Add a candy thermometer, and cook until mixture is 240 degrees, about 8-12 minutes.{#1 - note below}
  5. Remove from heat and carefully pour mixture over the gelatin. Add vanilla. Beat on high speed until mixture triples in volume, and is thick and white. {#2 - note below}
  6. In a seperate bowl, with clean beaters, beat the egg whites on high speed until stiff peaks form. Fold egg whites into marshmallow mixture. Pour mixture into prepared baking pan. {#3 - note below} Smooth batter with a greased spatula.
  7. Place marshmallow, uncovered, in fridge and chill for about 3 hours or overnight.
  8. Carefully lift marshmallows from pan and place on cutting board, using a large WET knife,{#4 - note below} cut marshmallows into squares.
  9. Melt chocolate in microwave and carefully dip marshmallows into chocolate, add sprinkles or candy canes if desired. Place on wax paper lined cookie sheet. After they set up, place in air tight container. They will keep about 1 week.

Baker's Notes:

  1. These were not difficult, but did take awhile to make. So allow yourself some time.
  2. I do not have a candy thermometer, I did use my meat thermometer, which probably was not the best to use, but it did give me a reading, although I'm not sure how accurate it was. I boiled the mixture about 8 minutes.
  3. I used my hand mixer (that's all I have) and it took about 4-5 minutes, the bowl was almost full of marshmallow mixture.
  4. The mixture is VERY sticky, so you won't get all of it out of the bowl.
  5. If you run your knife under cold water, the marshmallows cut much easier.

I also cut some with cookie cutters, I just dipped the cutter in powdered sugar before cutting.

Some of them I just rolled in powdered sugar, and others I dipped in melted chocolate and added some sprinkles and crushed candy canes.

I will be adding some Hot Cocoa mix and a bag of Homemade Marshmallows to my baskets for Christmas gifts.

I know it’s pretty close to Christmas, but I think these would make a fun Winter treat for friends or neighbors too! Maybe to have as a take home treat for a Snowman Party!

  3. This look divine! What an awesome gift too. I have been wanting to make homemade marshmallows for quite some time, but have just never actually done it. I’m going to print this recipe, & hopefully get around to it very very soon.
