Pumpkin Pie Cupcake Bites

It’s November, and we are kicking off this delicious pumpkin filled month with these Pumpkin Pie Cupcake Bites! I don’t know about you, but after a big Thanksgiving dinner, it’s nice to have just a little bite of something sweet. At least to tie you over until the “real” dessert is served.

Back in July, I shared Strawberry Margarita Cupcake Bites baked in these cute little cups, so when I was looking for a mini cupcake to bake for Thanksgiving, I thought of these right away.

The cups are actually made for ketchup and you can find them at restaurant supply stores. The cupcakes bake fine in them and most of the time pop right out. I did have a few, with this recipe, that stuck to the bottom, so you may want to give them a light coat of cooking spray. The cups also tear easily, so to eat them you can just tear the edge of the cup and take the cupcake out.

To bring in more of the Pumpkin Pie flavor, I topped them with real whipping cream and a sprinkle of cinnamon and sugar mixture. You can also use just cinnamon, I found though, if you combine it with a little sugar it looks better on top of the whipping cream or frosting.


Pumpkin Pie Cupcake Bites

The perfect little bite of dessert after a big dinner. Recipe from

  • Prep Time: 5 minutes
  • Cook Time: 15 minutes
  • Total Time: 20 minutes
  • Yield: 24 cupcakes or about 50 mini cups



  • 1 Betty Crocker spice cake mix
  • 1 cup canned pumpkin {not pumpkin pie filling}
  • 1/2 cup buttermilk {splash of vinegar in a measuring cup and fill with milk}
  • 1/3 cup oil
  • 4 eggs
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg

Whipping Cream

  • 1 cup heavy whipping cvream
  • 1/2 cup powdered sugar
  • Splash of vannila



  1. Preheat oven to 350 degrees, place cups on a cookie sheet or liners in a cupcake pan
  2. Mix cake batter with additional ingredients until well combined
  3. Divide into cups or liners – for the cups I used 1 tablespoon batter
  4. Bake cups about 10 minutes and cupcakes about 15-18 minutes or until a toothpick inserted comes out clean

Whipping Cream

  1. Pour cold whipping cream into a small bowl and beat on medium until cream begins to thicken, turn mixer to high and continue beating
  2. Gradually add powdered sugar and beat until cream is stiff
  3. Add vanilla
  4. Fit a decorator bag with a round tip {I used #2A}, fill with whipping cream
  5. Pipe onto cooled cupcakes, sprinkle with cinnamon and sugar mixture, optional



New Year’s Eve Cupcake Shooters

As promised, I have another New Year’s Eve Cupcake for you! But never fear…they are super easy. Do you remember the Candy Cane Cupcake Shooters from Christmas? These New Year’s Eve Cupcake Shooters are just like them, I just changed up the colors and flavors.

I used the same Shot Glasses that I found at Pier 1 {they call them Cordial Glasses}, mini vanilla cupcakes with festive silver and blue colors. Here is what you will need…


New Year’s Eve Cupcake Shooters

Fun and festive New Year’s Eve Cupcake Shooters from


  • Shot Glasses or other small glass
  • Any flavor Mini Cupcakes, a sheet cake or even a square cake
  • Small round cookie cutter – I used the inside of a doughnut cutter
  • Decorating Icing or your favorite frosting
  • Wilton Sky Blue Coloring or other color
  • Decorator bag fitted with a #1M Tip
  • Silver Sprinkles
  • Blue colored sugar – I mixed 2 shades of blue
  • Frilly pick – I found those at Pier 1 also {optional}
  • %


  1. Bake the cupcakes, no liners needed, let cool completely.
  2. Cut with small round cookie cutter.
  3. Color icing with Sky Blue coloring, fit a decorator bag with a #1M Tip, and fill with icing.
  4. Layer cupcake, icing, and sprinkles.
  5. Repeat layers and add a frilly pick if you like.

The color options are endless. I think they would even make a great Baby or Bridal Shower treat, be sure to serve with a spoon though.

And in case you don’t have the shot glasses, I thought I’d share how they look in a small votive glass. Just about any little glass will do, you could even use a clear plastic glass if you are feeding a crowd. I used the whole mini cupcake in these, you will need to adjust the size of your cupcake depending on the size of the glass.

As you probably have heard me talk about…a lot…this Friday marks 1 fabulous year of Cupcake Chronicles Newsletter. When I started sharing cupcakes a couple years ago, and then started the newsletter last year, I never dreamed how it would grow. We are currently close to 6,000 subscribers for Cupcake Chronicles and I couldn’t be more THRILLED! It’s been a lot of work, but I have loved every…single…minute!!

I just LOVE Valentine’s Day…next to Christmas, it’s my favorite holiday to bake for. The options are endless, from quick and easy to difficult and time consuming. You all know I love to create impressive looking desserts, that are easy and don’t take lots of time.

These Valentine Cupcakes are exactly that! Impressive looking {I think} but quick and easy!

Won’t your sweetie be so impressed when you bake these to finish off your romantic dinner together?!

Back in August, I told you about my trip to the Betty Crocker Test Kitchens. Every once in awhile they surprise me with a little package in the mail, and last week I received a few of their new desserts.

I used the Decadent Supreme Cake Mix, it’s a chocolate cake mix with chocolate mousse. Here’s what you will need…


Valentine Cupcakes

Chocolate and cherry cupcakes for Valentine’s Day from



  • Betty Crocker Decadent Supreme Cake Mix {or other chocolate cake mix}
  • Eggs, Buttermilk and Butter {learn how I make a cake mix taste like it’s from scratch }
  • Chocolate Mousse packet plus milk {comes with the cake mix}
  • Maraschino Cherry Filling {recipe below}


  • Maraschino cherries {10 oz jar} chopped
  • 1/2 cup maraschino cherry juice
  • 2 tablespoons corn starch
  • 1/3 cup sugar
  • 1 tablespoon butter {I used I Can’t Believe It’s Not Butter}



  1. Mix cake according to directions on the box. I baked them at 350 degrees for about 10 minutes, either check with a toothpick to make sure they are done, or by touching and make sure they spring back.
  2. After they cooled completely, I used a butter knife and gently released the cake from the side of the cup.
  3. Make the Chocolate Mousse according to the directions on the box.
  4. Put the mousse in the fridge while you are making the cherry filling.


  1. Drain the cherries, you will use all the juice, chop the cherries. {I chopped them pretty fine because I wanted them smaller for the cupcakes}
  2. In a small saucepan, combine the sugar and corn starch, gradually add the juice, cook and stir until the sugar is dissolved.
  3. Add the chopped cherries.
  4. Heat until boiling, cook until mixture is thick, remove from heat and add the butter.
  5. Cool completely. {I stuck mine in the fridge because I was in a hurry}


  1. Turn cupcakes over so that the bottom is up. {you can use either side, I just thought the bottom had better shape}
  2. Add a heaping teaspoon of mousse and then a small amount of cherry filling.

I baked mine in these cute little Heart shaped Silicone Baking Cups from Wilton.

I typically buy cherry pie filling, but I recently saw this recipe on Barbara Bakes. If you love to bake {of course you know I do}, you MUST pay her a visit! She has amazing recipes!

Here is another yummy option in case you don’t have the Heart Shaped Silicone Baking Cups…

Bake cupcakes in regular liners, remove from liner, slice in half, fill with mousse, top with cupcake. Add more mousse and cherry filling.
