There are few things I love more than Chai Tea Latte at Starbucks and since we don’t have a store in our town I really cherish the opportunity to grab one when I happen across one. When I can I love pairing it up with a slice of their delicious Banana Walnut Bread, when I can’t I really miss it. So when I found this recipe for Banana Walnut Bread: Starbucks Copycat Recipe I knew I needed to give it a try. But since I’m not one to make something without leaving my signature on it, I thought I’d make it a little healthier by substituting Truvia Baking Blend in place of the sugar in the recipe.

Recently there was some new construction happening in town and the building going up looked like it might be a Starbucks store. Unfortunately it didn’t turn out to be one, which might be a mixed blessing. I’m not sure our budget could handle it if a store ever opened up in our town.

Although this Banana Walnut Bread has many of the usual ingredients in it, it’s actually made with Truvia Baking Blend. We have chatted over the last several months about how Truvia Baking Blend is a sugar substitute blend of zero-calorie Truvia natural sweetener and sugar then packaged in a product that’s designed for easy, at-home baking. It also can be substituted for sugar in any recipe by simply using half as much Truvia Baking Blend as you would sugar.

Along with the Truvia Baking Blend, you will need butter, bananas, walnuts, eggs, milk, bread flour, baking powder, baking soda and salt. The original recipe for Starbucks Banana Walnut Bread actually calls for margarine, but I like the richness of butter so I used that instead. You can certainly use margarine if you like.

My first reaction upon tasting this recipe was that it tasted exactly like what you can get at Starbucks, and judging from the response of my boys and their girlfriends I’ll be making this again soon! Banana Walnut Bread: Starbucks Copycat Recipe

Ingredients

  • 1 3/4 cups bread flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup butter, softened
  • 1/3 cup Truvia Baking Blend
  • 1 cup mashed bananas {about 2-3 very ripe bananas}
  • 2 tablespoons milk
  • 2 eggs
  • 1 cup chopped walnuts, divided

Instructions

  1. Preheat oven to 350 degrees and spray a 8x4 inch loaf {bread} pan
  2. In a medium bowl, combine the flour, baking powder, baking soda and salt, set aside
  3. In a large bowl, beat together the butter and Truvia Baking Blend until light and fluffy
  4. Add the mashed bananas, milk and eggs, mix well
  5. Add half of the dry ingredients and mix just until combined
  6. Add the remaining dry ingredients, stir in 1/2 cup chopped walnuts just until combine.
  7. Do not overmix or the bread will be tough
  8. Spread evenly into pan, sprinkle with remaining 1/2 cup chopped walnuts
  9. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in pan about 10 minutes, remove from pan and continue to cool on wire rack

Recipe adapted from CopyKat Dining Out at Home Cookbook. You can use 2/3 cup sugar instead of Truvia Baking Blend if you want

    is there nutrition info on this recipe? I don’t know where to find it….
    my husband is diabetic and loves banana bread…..so thought I’d try this, but need nutrition info.

      Hi Barbie-

      I used a calculator and this is what I found. It might not be 100% accurate, but it should be close!
      In the entire loaf there is 3,300 calories, 282 carbs, 217 grams of fat, 80 grams of protein, 7000 grams of sodium and 46 grams of sugar.
