Apple Bread

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon apple pie spice (recipe here)
  • 3 eggs, beaten
  • 1 cup oil
  • 1 1/4 cup brown sugar, packed
  • 1 cup sugar
  • 1 tablespoon vanilla extract
  • 2 cups Fuji apples, cored, peeled and diced small
  • 3/4 cups chopped pecans


  1. Preheat oven to 325 degrees and spray 8×4 bread pans with cooking spray
  2. Sift together dry ingredients; flour, baking powder, baking soda, salt, and spices
  3. In a large bowl, blend together eggs, oil, sugars and vanilla
  4. Gradually add the dry ingredients and blend
  5. Peel, core and cut the apples and pecans, fold into batter
  6. Pour batter into prepared pans
  7. Bake for 40-50 minutes or until a toothpick inserted comes out clean
