One of the best things about Spring and Summer are all the fresh fruits and vegetables. Sure you can get some of them during the Winter, but somehow they just seem to taste better during the warm weather. Sugar Cookie Fruit Pizzas

Ingredients

Cookies – [Recipe HERE|http://hoosierhomemade.com/grandmas-soft-sugar-cookies/] or purchase store bought

Cream Cheese Spread

  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 3/4 cup COOL WHIP whipped topping

Fruit Topping

  • Strawberries, Kiwi, Blueberries or any other fruit you like

Glaze

  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1/2 cup unsweetened pineapple juice or orange juice
  • 1/4 cup water
  • 2 tablespoons lemon juice

Instructions

Bake cookies and cool

Cream Cheese Spread

  1. In a mixing bowl, beat cream cheese and powdered sugar until smooth
  2. Fold in whipped topping, set aside

Glaze

  1. In a small saucepan, combine all glaze ingredients, bring to boil and cook for 2 minutes, stirring constantly until thickened
  2. Pour into small bowl and place in fridge until cooled but not set

Assemble Sugar Cookie Fruit Pizzas

  1. Spread each cookie with cream cheese spread, top with fruit and drizzle with glaze
  2. Refrigerate for 1 hour or until chilled

Notes

The recipe for the Cream Cheese Spread and Glaze is enough for 12-18 cookies, it can easily be doubled.

It’s so hard to decide what I like best…the flavors of Fall; apples, pumpkins, cinnamon or maybe the flavors of Spring; lemon, strawberry, lime…oh the decisions! Even though the calendar says it’s Spring, it definitely still feels like Winter around here. So with Easter this weekend, and an attempt to enjoy Spring, at least the flavors of Spring, I made Tangy Lime Bars.

While I’ve made many different recipes for Lime Desserts, I’ve never used a recipe for a lime filling that is baked. The original recipe is from Truvia and uses their Baking Blend.

The crust in this two part recipe is made with butter flavor shortening, Truvia Baking Blend, flour, graham cracker crumbs and salt. And the filling is made with eggs, Truvia Baking Blend, flour, lime juice and peel.

Truvia Baking Blend is a sugar substitute blend of zero-calorie Truvia natural sweetener and sugar and packaged in a product that’s designed for easy, at-home baking. It also can be substituted for sugar in any recipe by simply using half as much Truvia Baking Blend as you would sugar.

Beat in the mixer until fluffy

Add the Truvia Baking Blend, flour and lime peel, whisk together.

Tangy Lime Bars

  • Prep Time: 10 minutes
  • Cook Time: 45 minutes
  • Total Time: 55 minutes

Ingredients

Crust

  • 2/3 cup Butter Flavor Shortening
  • 1/3 cup Truvia Baking Blend
  • 1 cup Flour, all-purpose
  • 1/2 cup Graham Cracker Crumbs
  • 1/4 teaspoon Salt

Filling

  • 3 Large Eggs
  • 3/4 cup Truvia Baking Blend
  • 1 tablespoon Flour, all-purpose
  • 1 1/2 teaspoon finely grated lime peel
  • 1/4 cup fresh lime juice
  • 2-3 drops green coloring, optional

Instructions

Crust

  1. Preheat oven to 350 degrees and lightly spray a 9 inch baking pan with cooking spray
  2. Beat together the shortening and Truvia Baking Blend until fluffy
  3. Add the flour, graham cracker crumbs and salt
  4. Beat until dough forms
  5. Press into baking dish, evenly
  6. Bake at 350 degrees for 20 minutes or until golden brown
  7. Cool completely

Filling

  1. In a large bowl, whisk the eggs until blended
  2. Whisk in the Truvia Baking Blend, flour and lime peel until blended
  3. Whisk in the lime juice and optional green coloring
  4. Pour over cooled crust
  5. Bake for 25-30 minutes or just until set in center
  6. Cool on counter for 15-20 minutes and then place in fridge for at least 2 hours for best results
  7. Top with whipped topping and strawberries if desired

Making your own marshmallow can seem quite intimidating, but it’s really not. The hardest thing is working with it fast enough before it begins to set. I used the same recipe that I did when I made the Homemade Peeps. The shape ideas are endless for this Homemade Marshmallow.

These Homemade Marshmallow Flowers are perfect for Easter, Spring, maybe a Garden Party! These are just adorable…and delicious too!

Let me show you how to make them…

In a large mixing bowl add 1/3 cup cold water and sprinkle with 1 package of  unflavored gelatin, and let set 5 minutes.

While the gelatin is setting, cook the sugar and water mixture on the stove. Bring to a boil and add your thermometer, the mixture needs to come to the soft ball stage, about 240 degrees F.

Then carefully pour the sugar mixture over the gelatin and beat on medium speed {6 on my KitchenAid}.

Continue beating until soft peaks form and the marshmallow is glossy and white.

While the marshmallow is beating, prepare your colored sugar and decorator bags. Place each of the colored sugars on separate paper plates and fit a decorator bag with a #1 large star tip.

Now this is where I need to apologize, I had to work so fast that the photos did not get taken.

Fill the bag with marshmallow, and quickly pipe stars or flowers onto the colored sugar. I piped about 5 on each plate. Next time I think I will have 2 sets of plates for each color of sugar and pipe 6 or 8 onto each plate.

Carefully roll the marshmallow in the colored sugar and place on wax paper. Push a mini M&M into the center, pushing down all the way.

After the flowers are done, you can serve them like that or make them into flowers.

To assemble the flowers, I wrapped a lollipop stick with green twine and added a small leaf cut from scrapbook paper with a glue dot. For the pot, I filled it with floral foam and added chocolate jimmie sprinkles for the dirt.

Homemade Marshmallow Flowers

Homemade Marshmallow is easier than you think. Recipe from HoosierHomemade.com

  • Prep Time: 30 minutes
  • Total Time: 30 minutes

Ingredients

  • 1 envelope unflavored gelatin
  • 1/3 cups cold water
  • 1 cup sugar
  • 1/4 cup water
  • Colored Sugars – your favorite colors
  • Mini M&M’s or other candy for centers

Instructions

  1. Pour 1/3 cup cold water into large mixing bowl, sprinkle gelatin over and let set while the sugar is cooking {at least 5 minutes}
  2. Add sugar and 1/4 cup water to a heavy saucepan, bring to boil stirring. Add the thermometer.
  3. Boil until thermometer reaches the soft ball stage, 240 degrees F.
  4. Remove from heat and pour over gelatin.
  5. Beat on medium speed for about 8-10 minutes until soft peaks form
  6. Place colored sugars on separate paper plates
  7. Fit a decorator bag with a #1 large star tip and fill with marshmallow
  8. Pipe marshmallow onto paper plate and coat with colored sugar
  9. Place on wax paper and push a M&M into the center

The shape ideas are endless, this recipe was originally made into Homemade Peeps. Just work very quickly once the marshmallow is ready.

Well my friends, Spring is on the way, at least we are hoping it is! Spring brings to mind…tulips, daffodils, trees budding, fresh air and of course Spring Desserts…especially lemon and strawberry! Ever since I used the Meyer Lemons in the Citrus Drop Cookies last month, I’ve been on the lookout for another delicious recipe to use them again.

As I was flipping through my Pillsbury wall calendar, I spotted the Meyer Lemon & Strawberry Pie, and with the beautiful, juicy strawberries in the store right now…it was a win – win!

The filling is a light yet tangy lemon flavor cooked on the stovetop and spread in a flaky pie crust. Then topped with fresh strawberries and a heaping spoonful of whipping cream…heavenly!

The ingredient list is simple; Meyer Lemons, egg yolks, flour, cornstarch, water, butter and Truvia Baking Blend combined for the filling. The pie crust can either be store bought or homemade. It’s actually very easy to make pie crust, I used the recipe from Barbara Bakes. And fresh strawberries for the top. Oh and…did you know today is National Strawberry Day?

Next you will need to temper the egg yolks, this is very simple, just whisk 1/2 cup of the cooked mixture into the egg yolks, then gradually stir the egg mixture back into the cooked mixture.

Now add in the lemon juice and peel, cook for about 5 minutes, stirring constantly until the mixture is thickened. Remove from the heat, and stir in the butter. Let stand for 10 minutes before pouring into the baked and cooled pie crust.

After the filling has cooled in the fridge for a couple hours, then clean and slice the strawberries and add on top of the filling. Serve with fresh whipping cream and you have a delicious Spring Dessert!

  • 1/2 cup Truvia Baking Blend
  • 2 tablespoons cornstarch

  • 1 tablespoon grated Meyer lemon peel
  • 1/3 cup Meyer lemon juice
  • 1 tablespoon butter

Topping

  • Fresh Strawberries
  • Fresh Whipping Cream or whipped topping

Instructions

  1. Preheat oven to 400 degrees. Prepare and bake pie crust according to directions on box or make your own in a pie plate or tart pan.Cool

Filling

  1. In a saucepan, combine flour, cornstarch and Truvia Baking Blend
  2. Gradually add water, whisking constantly
  3. Heat to boiling over medium heat, cook and stir for 1 minute, remove from heat
  4. Whisk egg yolks in a small bowl. Gradually add 1/2 cup of cooked mixture, whisking constantly.
  5. Stir the egg mixture into the cooked mixture
  6. Stir in butter, lemon juice and peel, cook over medium heat for about 5 minutes until thickened, stirring constantly
  7. Remove from heat and let stand 10 minutes
  8. Pour into cooled pie crust and place in fridge for at least 2 hours
  9. Clean and slice strawberries when you are ready to serve
  10. Serve with fresh whipping cream
  11. Keep leftovers in fridge

Spring Dessert: Flowerpot Pie and Honey Bees

Any chance I get to celebrate with food is GREAT with me and this weekend is Earth Day! Yesterday I shared fun Bug Cupcake Cones and today you will find more Bug Cupcakes that I shared over on Lifetime Moms.

Not only do I love creating fun desserts, I love them even more if they are quick and easy…and of course, look like I spent a long time on them. To celebrate Earth Day…or Spring…or Mother’s Day…or just because…how about this delicious Flowerpot Pie with some yummy Honey Bees buzzing around made with simple ingredients including COOL WHIP whipped topping!

I think the flowers are almost as fun to make as the dessert! Although the Honey Bees were pretty fun too!

Let’s get started…

Gum Drop Flower Supplies:

  • Gum Drops
  • Mini Cookie Cutters {flowers and leaves}
  • Pretzels
  • Small amount of sugar for rolling the gum drops out
  • Small amount of frosting to attach centers and leaves

Directions:

  1. On a cutting board or hard surface, sprinkle a small amount of sugar
  2. Using your hand, press gum drop out then roll out with a rolling pin, flipping from side to side several times
  3. Cut flower out with cookie cutter
  4. Repeat for leaves and centers of flowers
  5. Attach to the pretzel with a small amount of frosting
  6. Place in fridge or freezer for about 15 minutes to set the frosting

It’s almost too cute to eat…almost

Add a dollop of COOL WHIP, a sprinkle of cookie crumbs and be sure to watch out for the rocks in the dirt!

Flowerpot Pie Recipe

Quick & easy dessert to make for Spring, Mother’s Day, Earth Day or just because. Recipe from HoosierHomemade.com

  • Prep Time: 10 minutes
  • Total Time: 10 minutes

Ingredients

  • 1 box {4 serving size} JELL-O Chocolate Instant Pudding
  • 1 cup cold milk
  • 1 tub {8 oz} COOL WHIP Whipped Topping, thawed
  • 20 chocolate sandwich cookies, finely crushed
  • 1 1/2 cups rocks – I used 3/4 cup walnut pieces and 3/4 cup chocolate chips {you could also use peanuts or granola}
  • 1 prepared Kraft Nabisco Honey Maid Graham Cracker Crust
  • Gum Drop Flowers

Instructions

  1. In a large bowl, pour in milk and add pudding, whisk for 1-2 minutes until smooth
  2. Gently fold in COOL WHIP whipped topping
  3. Stir in 1 cup cookie crumbs and rocks
  4. Spoon into crust and sprinkle with remaining cookie crumbs
  5. Freeze 4 hours or until firm
  6. To serve, remove from freezer and let stand at room temperature 15 minutes
  7. Add Gum Drop Flowers
  8. Store leftovers in freezer

Notes

Liz says…This pie is delicious, be sure to allow enough time for freezing though.

Fun treat to enjoy for Spring. Recipe from HoosierHomemade.com

Ingredients

  • 1 box {4 serving size} JELL-O Vanilla Instant Pudding
  • 1 cup cold milk
  • 3 tablespoons honey
  • Yellow food coloring {optional}
  • 1 tub {8 oz} COOL WHIP Whipped Topping, thawed
  • 3/4 cup finely crushed chocolate cookies
  • Wings – Chocolate cookies cut in half
  • Head – Black gum drop
  • Antennae – Black licorice

Instructions

  1. Directions:
  2. In large bowl, pour milk, honey and food coloring {a few drops}
  3. Add pudding, whisk for 1-2 minutes until smooth
  4. Gently fold in COOL WHIP whipped topping
  5. Layer pudding mixture with cookie crumbs into dessert glasses {I used small glass votive containers}
  6. Refrigerate for at least 1 hour
  7. When you are ready to serve, add wings and head

Notes

Liz says…These Honey Bees were fun to make, I didn’t care for the honey mixed into the pudding, but that’s just my taste.

Ice Cream Cone Cupcakes with Bubble Gum Frosting

Hey! I’m SUPER excited to share these fun little Ice Cream Cone Cupcakes with Bubble Gum Frosting!! A couple weeks ago, I gave you a sneak peak at some goodies that arrived on my door step from Duncan Hines…the new Frosting Creations!

I could hardly wait to get my hands on the spatula and stir up a batch! Stay tuned for more recipes using Duncan Hines Frosting Creations, I have a fun Easter recipe planned for next week, and more to come!

Duncan Hines Frosting Creations were created specifically for the special flavors, there are 12 of them…a few of my favorites…Strawberry Shortcake, Cotton Candy, White Chocolate Raspberry and of course Bubble Gum!

I mixed up the Bubble Gum Frosting and put it to the test. My first stop…my 20 year old son…gave him a little taste and asked what he thought…”Mmmmm…Bubble Gum” was Andrew’s response! He knew right away that it was Bubble Gum flavor and later devoured the Ice Cream Cone Cupcakes.

The next trial…how would the frosting hold up to decorating? The frosting is not thick like decorator icing…BUT, it’s not suppose to be. It’s designed for the special flavors that kids {and adults} will love!

Stefan Aps, director of marketing for Duncan Hines says…”Duncan Hines Frosting Creations line gives bakers an entirely new palate of colors and flavors to really elevate their creations.”

After mixing up the Bubble Gum Frosting Creations, I chilled it for a bit in the fridge, then filled a decorator bag with a #12 tip and swirled the frosting like an Ice Cream Cone and added Bubble Gum to the top.

Now let’s chat a bit about the Ice Cream Cones

When I first saw these Mini Ice Cream Cones over on The Wooden Spoon, I really didn’t realize just how tiny they were. I had to take a picture to show you just how itty-bitty they are…fun!

I used the Duncan Hines French Vanilla Cake Mix and added the ingredients I always do to make it taste more like homemade.

And here’s a little trick I learned awhile back…when baking Ice Cream Cone Cupcakes that are sometimes hard to keep from tipping over…bake them upside down!! Yup! Just spray your cupcake pan, add the batter and position the cone on top of the batter.

For these mini cupcakes, I used about 1 tablespoon of batter and the mini Ice Cream Cones by Joy, they come 42 in a box and I found them at Walmart. When you add the cone to the batter, just be sure that the cone is covering the batter, if the batter is oozing out around the cone, you have too much batter, which is okay, you just won’t get a nicely shaped top.

Then when they bake, the batter will fill up inside the cone. Baking time will depend on how large the cupcake is. I baked the mini’s about 7-8 minutes. For a regular size, you will want to bake it about 10-12 minutes.

I think these mini Ice Cream Cone Cupcakes are just adorable! And the Duncan Hines Bubble Gum Frosting Creations makes them even better!!

You can find Duncan Hines Frosting Creations at Walmart and Target on March 26th, but will not be fully distributed in other grocery stores until April 9th.

Ice Box Dessert ~ Spring Dessert

I’m so excited! The Spring Blog Hop Party starts today! Are you ready for some delicious Easter and Spring treats? I know, I am. Our hostess is Diane from Created by Diane.

Today I’m sharing this very light and creamy Ice Box Dessert.

Ice Box Dessert

Light and creamy, this Ice Box Dessert from HoosierHomemade.com is a great springtime dessert.

Ingredients

  • 2 cups Graham Crackers, crushed
  • 4 tablespoons Butter or Margarine, melted
  • 1 pkg (8 oz) Cream Cheese, softened
  • 2 cups Milk
  • 1 pkg. (small box) Instant Vanilla Pudding (I used French Vanilla)
  • 1 tub (8 oz) Whipped Topping, thawed and divided in half
  • Fresh Strawberries, cut into quarters
  • Fresh Kiwi, peeled and sliced

Instructions

  1. Mix graham cracker crumbs and butter until well combined, press into bottom of 13 x 9 pan.
  2. Beat cream cheese in large bowl until creamy, gradually add the milk, mixing well after each addition.
  3. Add dry pudding mix, beat 1 minute.
  4. Gently fold in whipped topping, spread over crust.
  5. Place in frig to chill for about 15 minutes.
  6. Cover with remaining whipped topping.
  7. Chill for at least 30 minutes.

  9. Serve with fresh fruit. I used strawberries and kiwi, but any fruit would be really good. I also made some Strawberry Sauce to drizzle over the top, this was my favorite.
