Don’t miss my giveaway for the new Martha Stewart Cupcake Book!

Last week I shared with you my strawberry recipes that I had in mind for the .49 strawberries that I bought at Aldi’s. Today I thought I would let you know how I used all those strawberries.

Grilled Margarita Chicken Salad

(sorry the picture is a little blurry)

This salad was awesome! The dressing totally makes it special. I started with a bag of Spring Mix, added the strawberries and mango.

I decided to just cook the chicken on the stove instead of grilling. My son cut the chicken in half. I recently learned a little trick to make the chicken stretch farther from Life As Mom. It worked out great!

I heated a large skillet with a little oil, cooked the chicken and after flipping it once, I marinated it with the dressing.

My youngest and oldest don’t eat salad, usually, so we had plenty of chicken for them to eat it just plain. My oldest did actually try the salad and liked it.

I cut the chicken in small pieces, put in on top of the salad and sprinkled the cilantro on. It was a hit!

For dessert that night, my youngest son made another Strawberry Pie.

Strawberry Trifle Dessert (aka Triple Strawberry Delight named by Casey, my son)

We have also made smoothies several times. One morning we had strawberry/banana and another I added fresh pineapple.

The strawberry patches in our area are just starting to open. I hope to have some time next week to pick some berries and freeze them. They sure will taste great during the winter months.
