<p>I first saw these fun <strong>Classroom Kids Cupcakes</strong> over at <strong><a title="Wilton Cupcakes" href="http://www.wilton.com/idea/Smile-Markers-Cupcakes" target="_blank">Wilton</a></strong>, but simplified them for you by using a Vanilla Wafer Cookie instead of the royal icing that they used for the face. I think they are perfect for a Classroom Party, or even a birthday party.</p>

<p>During my trip to <strong><a title="Wilton Cake Decorating" href="http://hoosierhomemade.com/wilton-visit-and-giveaway/" target="_blank">Wilton Headquarters</a></strong>, I picked up these <strong><a title="Wilton Food Writers" href="http://www.amazon.com/gp/product/B0000VM9EE/ref=as_li_ss_tl?ie=UTF8&amp;tag=hoosihomem-20&amp;linkCode=as2&amp;camp=217145&amp;creative=399369" target="_blank">Food Writers</a></strong> at the Tent Sale. I haven&#8217;t had the opportunity to use them yet, and I seriously think I will be hunting for cupcakes that I can use them on. They are super easy, and are just like you are using a regular marker. They dry quickly and don&#8217;t smudge at all.</p>
<p>Add the face to the Vanilla Wafer, being as simple or complex as you like.</p>

<p>Color the frosting in a variety of colors, I used pink and purple for girls, green and blue for boys. Then for the hair, I colored brown, black, yellow and then for the reddish hair, I combined copper and a drop of red. Fill frosting in decorator bags and use either a Round Tip #3 or #4 or both if you like.</p>
<p>Place the face {vanilla wafer} on the cupcake, placing it toward the top, add the hair and then pipe on the children&#8217;s names.</p>

<p>We are getting closer&#8230;school starts next week for our boys. Although I&#8217;m not really looking forward to it {and I&#8217;m sure the boys aren&#8217;t either}, I am looking forward to getting back on track with a better schedule.</p>

<p>I&#8217;m kicking off this <strong>Back to School Cupcake</strong> series with these fun little <strong>Mini Apple Spice Cupcakes</strong>, the cake is moist with a trio of  spices; cinnamon, nutmeg and ground cloves add a hint of Fall flavor. They are frosted with Brown Butter Cream Cheese Frosting and an apple made with a gum drop and tootsie roll.</p>

			<content:encoded><![CDATA[<p><strong>Do you cook a special meal for your kids before they head back to school?</strong></p>
<p>Our boys start school next week&#8230;where did the summer go? We were super busy, and didn&#8217;t get our fun list completed, but we still had a great time! So, instead of cooking a <strong>Back to School Meal</strong> to remind the boys of school, we decided to cook some of the food that reminds us of the fun we had during the summer.</p>

<p>Mini Corn Dogs, Curly Fried Potatoes, Grilled Sweet Corn, Red Cream Soda and Mini Apple Spice Cupcakes were on the menu.</p>
<p>Reminding us of all the baseball games we went to, the mini corn dogs are super easy and fast to cook.  Doug loves the Curly Fried Potatoes at our County Fair. We used the <a title="Apple Peeler" href="http://www.amazon.com/gp/product/B001C6E0Q6/ref=as_li_ss_tl?ie=UTF8&amp;tag=hoosihomem-20&amp;linkCode=as2&amp;camp=217145&amp;creative=399373" target="_blank">Apple-Peeler-Corer-Slicer</a>, mine is from Pampered Chef, it not only makes <a title="Apple Pie Recipe" href="http://hoosierhomemade.com/upside-down-apple-pie/" target="_blank">Apple Pie Baking</a> a breeze, the curly fries turned out great too. Just wash the potatoes, place on the prongs, turn the handle and you have instant curly fries. Pat dry with paper towel and fry in 350 degree oil. Drain on a paper towel and sprinkle with salt.</p>
<p>We added the Grilled Sweet Corn because with all the fried food, we needed some veggies and it also reminds us of our trips to the Farmer&#8217;s Market in Sawyer, Michigan.</p>
<p>The Red Cream Soda&#8230;well, that&#8217;s another story. Let&#8217;s just say, it involved one 14 year old boy, 100 degree hot day and a tire swing at the playground. I will spare you the details.</p>
<p><strong>Back to School Cupcake</strong>s with candy apples were the reminder that school is close. <p style="text-align: left;">Since everyone seemed to really enjoy the <strong>Cupcake Challenge</strong>, and because it was suggested by a reader. I&#8217;ve decided to have a Holiday Challenge! So get those creative juices flowing! We will start in early November, so that we all have enough time to use all the ideas during the Holidays!</p>

<p style="text-align: left;">I&#8217;m sharing today&#8217;s <strong><em>Back to School Apple Cupcakes </em></strong>for two reasons. First, of course, they are super cute for Back to School. They will also be the very special cupcakes for a wedding that I&#8217;m baking for next year. The couple are having their wedding reception at an Apple Orchard, and have chosen several of my cupcakes to serve. I&#8217;m so excited!! We will serve some of these Apple Cupcakes too!</p>

			</p><div id="zlrecipe-summary"><p class="summary italic">Festive apple cupcakes for Back-to-School at HoosierHomemade.com.</p></div></div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient">Cupcakes baked in Red Liners</li><li id="zlrecipe-ingredient-1" class="ingredient">Frosting (<a href=" http://hoosierhomemade.com/buttercream-frosting/" class="ingredient-link" target="_blank">Buttercream </a> or canned, whatever you like best)</li><li id="zlrecipe-ingredient-2" class="ingredient"><a href=" http://www.amazon.com/Wilton-601-5580-2-Ounce-Certified-Kosher-Colors/dp/B0000CFN0Y?&camp=212361&linkCode=wey&tag=hoosihomem-20&creative=380733" class="ingredient-link" target="_blank">Red No-Taste Coloring </a> ( I use Wilton)</li><li id="zlrecipe-ingredient-3" class="ingredient">Mini plain or chocolate doughnuts</li><li id="zlrecipe-ingredient-4" class="ingredient">Tootsie Rolls (1 tootsie roll makes 2 stems)</li><li id="zlrecipe-ingredient-5" class="ingredient">Green Fruit Chews (Tootsie Fruit Rolls, Jolly Rancher, I used AirHeads)</li><li id="zlrecipe-ingredient-6" class="ingredient"><a href=" http://www.amazon.com/Wilton-Pearlized-Sugar-Ruby-5%C2%BC/dp/B003YJ14WC?&camp=212361&linkCode=wey&tag=hoosihomem-20&creative=380733" class="ingredient-link" target="_blank">Red Decorating Sugar </a></li><li id="zlrecipe-ingredient-7" class="ingredient">Black candy-coated sunflower seeds</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction">Reserve a little white frosting, if you want to make a bite mark in the apple. </li><li id="zlrecipe-instruction-1" class="instruction">Trim about 1/3 of the bottom half of the doughnuts. </li><li id="zlrecipe-instruction-2" class="instruction">Put a small amount of frosting on cooled cupcakes and add doughnut to top of cupcake, cut side down. </li><li id="zlrecipe-instruction-3" class="instruction">Place in freezer for about 10 minutes. </li><li id="zlrecipe-instruction-4" class="instruction">While the cupcakes are firming up in the freezer, create the leaves and stems.</li><div id="zlrecipe-instruction-5" class="instruction-label">For the stems…</div><li id="zlrecipe-instruction-6" class="instruction">Cut 1 Tootsie Roll in half, diagonally, mold into the shape of a stem.</li><div id="zlrecipe-instruction-7" class="instruction-label">For the leaves…</div><li id="zlrecipe-instruction-8" class="instruction">Cut taffy or fruit chew in rectangles.
