This past weekend, I had the pleasure to bake for a friend’s son’s birthday. Everytime I make a new cupcake, I have a new favorite.

Pictured above are Chocolate Filled Cupcakes and Butterfinger Cupcakes, I shared the recipes with you here.

My new favorite in this group, are the Strawberry Poke Cupcakes.  I was inspired by The American Homemaker, during my blog hopping on the Ultimate Blog Party.  I had been wanting to try poke cakes for awhile, and this was the perfect opportunity.

I started first by baking white cupcakes, then after they cooled, I poked holes in the top with a fork.

I then mixed strawberry jello and carefully poured it over each cupcake. You should put the cupcakes on a cookie sheet with a edge, because the jello overflows quite a bit. Then, place them in the frig for a few hours to chill.

I frosted them with whipped topping and added a chocolate dipped strawberry on some and 3 jelly beans on the others.

These cupcakes are very light and refreshing.  The perfect Spring treat.
