Rainbow Week is sadly just about done. I have one more fun recipe for you…Rainbow Ice Cream! I first shared the recipe a couple years along with the Rainbow Cupcakes. It’s such a fun idea, I wanted to bring it back again, but this time I created Rainbow Ice Cream Pops!

These Rainbow Ice Cream Pops are perfect for birthday parties or your St. Patrick’s Day Celebration…even a special after school treat! Let’s get started…

All you need are 2 ingredients for the Rainbow Ice Cream…Vanilla Ice Cream and Jell-O.

  1. Remove Ice Cream from the freezer and soften for 10 – 15 minutes.
  2. Sprinkle 2-3 tablespoons DRY Grape Jello in a plastic container
  3. Divide Ice Cream into 5 equal parts, spread ice cream over jello {it’s okay if the ice cream is lumpy, I used a spoon that I ran under hot water to help spread it}
  4. Repeat with remaining DRY Jell-O and ice cream
  5. Cover and place in freezer overnight or several hours

Run hot water on outside of container to loosen Ice Cream, and turn out onto wax paper lined cookie sheet.

Using a small cookie dough scoop, scoop the Rainbow Ice Cream into a mini muffin pan. I found it easiest this way so that the Ice Cream doesn’t spread. Pop them into the freezer for 5-10 minutes, pull them out and add the popsicle stick, then back into the freezer for about 30 minutes.

Now it’s time to coat them with chocolate. Melt chocolate chips with oil in the microwave, start with 20 seconds, and stir every 5 – 10 seconds until completely melted. Let set on the counter for about 15 minutes until room temperature, this is important because if the chocolate is too hot it will melt the Ice Cream.

Remove the pops from the pan, use a knife if necessary, dip in chocolate and let excess drip off, immediately add Rainbow Jimmie Sprinkles. Place back in freezer on wax or parchment paper.

Rainbow Ice Cream Pops

Delicious treat for birthday parties, St. Patrick's Day or even after school treat. Recipe from HoosierHomemade.com

Ingredients

  • 1/2 gallon vanilla Ice Cream
  • Jell-O - 6 small boxes; grape, berry blue, lime, lemon, orange and cherry
  • 3/4 cup chocolate chips
  • 1/4 cup oil
  • Rainbow Jimmie Sprinkles

Instructions

  1. Remove Ice Cream from the freezer and soften for 10 – 15 minutes.
  2. Sprinkle 2-3 tablespoons Grape Jello in a plastic container
  3. Divide Ice Cream into 5 equal parts, spread ice cream over jello {it’s okay if the ice cream is lumpy, I used a spoon that I ran under hot water to help spread it}
  4. Repeat with remaining jello and ice cream
  5. Cover and place in freezer overnight or several hours
  6. Remove from freezer and run hot water on outside of container to loosen
  7. Turn out onto wax paper lined cookie sheet
  8. Using a cookie dough scoop, scoop ice cream and place in mini muffin pan
  9. Place in freezer for 5 - 10 minutes, remove and insert popsicle stick in the center
  10. Return to freezer for 30 minutes
  11. To prepare chocolate, place chips and oil in a microwave safe bowl and heat 20 seconds, stir and continue heating and stirring every 5-10 seconds until completely melted
  12. Let set on counter until room temp, about 15 minutes
  13. Remove ice cream from freezer and take out of muffin pan, use a knife if necessary
  14. Place on wax or parchment paper in the freezer
  15. Working with 1 pop at a time, dip in chocolate and immediately add sprinkles
  16. Return to freezer
  17. Serve straight from the freezer

Notes

Prep time does not include freezing time, since it will vary. These can be made up to a week in advance, after the pops are made, place them in a container and store in freezer.
