Pink Lemonade Pound Cake

Semi-Homemade Sunday

Last week I shared with you the Cinnamon Rolls and how much I love Sandra Lee’s new magazine.  Today, I’m sharing this yummy, Pink Lemonade Pound Cake.

Pink Lemonade Pound Cake

1 White Cake Mix

1 c. Sour Cream

1/2 (12 oz) Container Frozen Pink Lemonade Concentrate, thawed

1/4 c. Pink Lemonade Drink Mix

1 (3 oz) pkg Cream Cheese

3 Large Eggs

1 t. Vanilla Extract

Preheat oven to 350 degrees. Spray an 8 inch loaf pan, line the bottom with parchment paper, set aside.

In a large bowl, combine all ingredients. Beat at low speed with an electric mixer for 1 min, then beat for 2 min. on medium-high speed. Pour batter into prepared pan, smoothing top.

Bake for 1 hour or until a toothpick comes out clean. Let cool in pan for 20 min, remove from pan and cool completely.

I baked my cake in my Pampered Chef mini loaf pans, and I had enough left for 5 or 6 cupcakes.

I combined a small amount of powdered sugar and a drizzle of pink lemonade for the glaze, and drizzled over the cake.
