Pink Lemonade Cupcakes:Cupcake Tuesday

It’s been super hot here in Indiana, as I’m sure it has been where you live too. Although I love the heat, and the sun, it’s been super humid too, which I don’t like.

As I finish writing this post, I’m in San Jose, California, where it’s actually a little chilly. Seems like we are never happy…right? Too hot…too cold…can’t there be a happy medium?

Today we have these yummy Pink Lemonade Cupcakes that are sure to cool you down, especially if you serve them with a nice tall glass of Pink Lemonade!

One of my very favorite tips to use to decorate cupcakes is the #1M. I think it gives the prettiest swirl. I used Buttercream Frosting and decorated some with white sugar pearlspink sparkling sugar and drizzled some with melted chocolate.

Ingredients

  • 1 White Cake Mix plus ingredients {4 eggs, and Oil}
  • 3/4 cup Pink Lemonade concentrate, thawed and undiluted
  • 1 tablespoon lemon peel
  • Pink Coloring {optional}
  • Buttercream Frosting
  • Sprinkles or other decorations {optional}

Instructions

  1. Place paper cupcake liners in a muffin tin. Preheat oven to 350 degrees.
  2. Pour Pink Lemonade concentrate into a measuring cup, add enough water to total the amount on the box. Add to cake mix, add oil, eggs and lemon peel. Mix well.
  3. Fill cupcake liners with approximately 1/3 cup cake batter and bake for about 15-18 minutes or until a toothpick inserted into cupcake, comes out clean.
  4. Cool completely
  5. Fill decorator bag with Buttercream frosting and fit with a #1M tip
  6. Pipe on frosting and decorate with sprinkles, etc.

    I grew up in San Jose and that’s something I sorely miss, cool summers- it was a heat wave if it got to 90 degrees! Now I live in Phoenix averaging 105 degrees! So can’t wait to try out these cooling cupcakes! Thanks!!
