While doing a little after-Christmas shopping with our youngest son, I had some extra time to browse through my Epicurious app on my new iPhone. I say extra time, because Casey loves {and I mean LOVES} tennis shoes! He received some Christmas cash and couldn’t wait to check out the new shoes out on the market. Of course, we had to hit about 6 different stores, and look at every pair, not as if he hasn’t already looked at them all. Which was just fine with me, because it gave me the opportunity to find some great new recipes to try, like these Peanut Butter Oatmeal Cookies.
Now these aren’t your normal, everyday run of the mill Peanut Butter Oatmeal Cookie, they are special! With the mixture of two kinds of oats, peanut butter and nuts, they are extra special! I under baked them just slightly, and they turned out soft, and oh so good!
Earlier I mentioned my new iPhone, I have to admit, I’m kind of stuck in my ways. I dug my heels in when Doug forced me to switch from my first phone to the Blackberry, and again, I hung onto the Blackberry forever before switching to the iPhone. I have to say, I’m really glad I switched. But I couldn’t have just any iPhone, I also needed to protect it with a special case.
And that’s where my wonderful Otterbox representative comes in. I sent her an email asking if she happen to have anything that might work, and sure enough, she sent me a Reflex Series Case. It’s really pretty cool! The best feature, it slides together in a snap. Ever since I received my Otterbox case, our middle son has been begging me for a case just like it. Apparently many of the regular cases are very difficult to get on and off, including the one he has for his phone.

Now, back to the Peanut Butter Oatmeal Cookies…
A delicious cookie, that you could even have for breakfast with the added protein from the peanut butter, nuts and oats. Recipe from HoosierHomemade.com
Ingredients
- 1/3 cup peanut butter
- 1/3 cup nuts, chopped {I used walnuts, the recipe called for pecans, either are great}
- 3/4 cup flour
- 1 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/2 cup white sugar
- 1/2 cup brown sugar, packed
- 1/2 cup {1 stick} butter, room temp
- 1 teaspoon vanilla extract
- 1 large egg
- 1/2 cup old fashioned oats
- 1/4 cup quick cooking oats
Instructions
- Combine peanut butter and chopped nuts in the food processor and mix until almost smooth
- In a small bowl, whisk together flour, baking soda and salt, set aside
- In a large bowl, beat together butter and both sugars until light and fluffy
- Add peanut butter mixture and vanilla, beat to blend well
- Beat in egg
- Add dry ingredients, mix well
- Add oats, mix well
- Beat well for another minute
- Cover with plastic and place in fridge for at least an hour
- Preheat oven to 350 degrees
- Spray a cookie sheet with non-stick cooking spray
- Drop dough by spoon or use a small cookie dough scoop
- Bake for 8 minutes, and then turn the pan
- Continue baking for 3-5 minutes more
- If you want a soft cookie, slightly under bake them {11 minutes} if you like a crisp cookie, bake them for 13 minutes. For the soft cookies, they will look a little doughy in the middle, but don't worry, they continue baking a bit after you remove them from the oven.
