Mini Strawberry Pies
I know Tuesday is Cupcake Day for me, but recently I made these, mini pies/little cupcakes/oh so delicious strawberry delights.

I started by crushing graham crackers in the food processor, and mixed in a little melted butter to make a crust.

And filled the cupcake liners with a spoonful

A short while ago I shared this Strawberry Pie with you. I have made it several times since and everyone that tries it, raves over it. And it’s super easy too!
I added the pie mixture to the top of the graham cracker crust, after letting it set up in the frig for about 20 minutes.

Into the frig they went, after a couple hours, I decorated them with a dollop of whipped topping and a strawberry.
I took these, Black Forest Cupcakes and Twix Bars for a Memorial Day cookout. They were a huge hit!
