Mini Rainbow Cupcakes

We are having so much celebrating St. Patrick’s Day with 17 days of Food and Fun! And all this week, it’s all about Rainbows! Did you grab your Printable Banner from yesterday? Thanks again to The Paper Cupcake for designing and offering it!

While I was coming up with ideas for Rainbow Week, I knew I wanted to share Rainbow Cupcakes, but there are limited ways to create them, then I remembered the Candy Corn Cupcakes on a stick that I shared last Fall. I knew right away what I wanted to share with you.

Adorable? I think so! Even though Rainbows are often used for celebrating St. Patrick’s Day, I think these would work great for a birthday party or maybe even a teen sleepover.

Mini Rainbow Cupcakes

Prep Time: 10 minutes
Cook Time: 8 minutes
Total Time: 18 minutes

Ingredients

Instructions

  1. Mix cake until well blended, divide into 6 bowls {about 3/4 cup in each}
  2. Add coloring to each of the batter
  3. Bake in mini muffin tins, with or without liners {I add about 1 tablespoon per cupcake}
  4. Cool completely
  5. Line the cupcakes up on the counter, add frosting {I used a #1M Tip}
  6. Add sprinkles
  7. Flatten the Gum Drop or Dots candy and add to the skewer - this will stop the cupcakes from slipping down
  8. Add the cupcakes onto the skewer

  1. what type of coloring did you use to color the cake batter? just regular food coloring? thanks 🙂

    1. Hi Roberta, I use Wilton gel coloring, it’s a little brighter than regular food coloring, but you can certainly use that too.
