Mini Peanut Butter Creme Cookie Cups

You know those days when you are craving something sweet…oh let’s say…chocolate and peanut butter? Or maybe you need a quick, but impressive looking dessert to take to the office, a potluck or maybe a luncheon for Teacher’s Appreciation. And I know most any Mom would be thrilled to receive some of these Mini Peanut Butter Creme Cookie Cups for Mother’s Day!

Well…I have you covered, my friends! These yummy little treats are from the Pillsbury Bake-Off finalist, Mary Fields from Gilbert, Arizona. The Pillsbury recipe directions call for the Peanut Butter Creme Cookie Cups to be made in a regular size muffin tin, I adapted them a bit and made them into a mini version.

The Peanut Butter filling is pretty rich, so I thought a small bite would be the perfect portion…unless you eat 4 or 5 like I did!

With only 4 ingredients…they are definitely quick!

Mini Peanut Butter Creme Cookie Cups Recipe

Mini Peanut Butter Creme Cookie Cups Recipe

Yield: 48 minis, 12 regular
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

A quick and delicious treat that the kids will love after school but fancy enough for a party. Recipe from HoosierHomemade.com. Adapted from Pillsbury

Ingredients

  • 1/2 cup Pecans, chopped finely
  • 1 package Pillsbury refrigerated chocolate chip cookies
  • 1/2 cup white baking chips
  • 1/4 cup Peanut Butter, creamy

Instructions

  1. Preheat oven to 350 degrees and place cupcake liners in muffin cups {either regular size or mini}
  2. For minis - slice off about 1/4 inch of cookie dough and divide into quarters, roll each part into a ball
  3. For regular size - slice cookie dough into 12 pieces
  4. Place pecans into a bowl, roll cookie dough lightly and place in liner
  5. For minis - using a tart shaper or spoon, gently press dough in the middle until it forms up the sides
  6. For regular size - Place each cookie, flat side down, in liner
  7. Bake at 350 degrees - minis for about 10 minutes - regular size 18-22 minutes or until edges are golden brown
  8. Remove from oven, the middle of the cookie cups will be puffed up, they will sink when they cool
  9. Cool completely
  10. In a small microwave safe bowl, place white baking chips and melt for about 1 minute, stir until smooth
  11. Add peanut butter and stir until well combined
  12. Spoon peanut butter mixture into cookie cups
  13. Store in covered container

Notes

Liz says...I loved these fresh from the oven. The peanut butter did set up a bit after they sat, next time I would thin out the peanut butter mixture with more baking chips or less peanut butter. They were still delicious though, even after setting up.

  1. these sound great. i am a peanut butter/chocolate fanatic so I am going to try these using peanut butter cookie dough and chocolate chips instead of white ones. Overkill? maybe…do I care…never!
