Mini Peanut Butter Cookie Sandwiches

Sometimes life gets busy…okay lets face it my friends, almost every day, life is busy! But just because it’s crazy around us, doesn’t mean we need to sacrifice treating our families to a special dessert. We just have to make the dessert quick and easy. These Mini Peanut Butter Cookie Sandwiches are a perfect treat for after school.

Made with Betty Crocker Peanut Butter Cookie Mix and decorated with Betty Crocker Cupcake Icing and sprinkles from Cake Mate, they are a snap to put together.

The Mini size are perfect for little hands, and a good portion control for us Moms who can’t stop eating them! I used a cookie dough scoop {2 tablespoons} and divided each ball in half, them rolled the dough, dipped in sugar and baked.

After the cookies are cooled, pipe on frosting, then roll in sprinkles. I find it easiest to pour the sprinkles onto a paper plate, then any sprinkles that are left, can be poured back into the jar. The decorating supplies are endless. Betty Crocker has Cupcake Icing that comes in a can like whipped cream, it’s so fun to use and of course, super easy too! There is Cookie Icing, Gel Writers, Icing Writers, tons and tons of sprinkles and the list goes on!

Finish off this fun after school treat with a Milk Shot! To add the sprinkles around the rim, dip the edge in water and then in sprinkles. It’s just fun!!

If you happen to have any cookies left, be sure to share with the Teacher! Simply stack the cookies in a mason jar, add a little fabric, ribbon and a card telling them how much you appreciate them!

Mini Peanut Butter Cookie Sandwiches

Ingredients

  • 1 pouch Betty Crocker Peanut Butter Cookie Mix
  • Water, Oil and Egg - according to directions on package
  • Sugar for dipping cookie dough
  • 1 can Betty Crocker Cupcake icing
  • Sprinkles

Instructions

  1. In a medium bowl, combine cookie mix with water, oil and egg.
  2. Preheat oven to 350 degrees and spray cookie sheet with non-stick cooking spray
  3. Form balls with an ice cream scoop or spoon, roll in sugar to coat and place on cookie sheet
  4. Bake for about 10 minutes or until slightly golden brown
  5. Cool completely
  6. Pipe frosting onto the bottom of a cookie, top with another, roll in sprinkles
