Mini Funfetti Sandwich Cookies

Are you enjoying all the fun ideas for Rainbow Week? I hope so…because I’m having a blast creating them for you! From the Mantel…to cupcakes…to a wreath…and now…Mini Funfetti Sandwich Cookies…the Rainbow fun continues!

These cookies are similar to Whoopie Pies, but since I didn’t use a traditional whoopie pie filling, I didn’t think I should call them that. Whatever they are called…I think they are so cute…and yummy, of course!

The cookies are made with 3 simple ingredients…a Funfetti Cake Mix, butter and 1 egg and they are filled with brightly colored Buttercream Frosting, in colors of the Rainbow. And we can’t forget the sprinkles…lots of sprinkles!

Mini Funfetti Sandwich Cookies

Prep Time: 5 minutes
Cook Time: 7 minutes
Total Time: 12 minutes

A fun little cookie to make for a birthday celebration or just because. Recipe from HoosierHomemade.com

Ingredients

  • 1 box Funfetti Cake Mix
  • 1 stick of butter, softened
  • 1 egg
  • Frosting
  • Sprinkles

Instructions

  1. Preheat oven to 350 degrees
  2. In a large bowl, soften butter in the microwave about 15 seconds
  3. Add cake mix and egg
  4. Beat until combined
  5. Spray a cookie sheet with non-stick cooking spray
  6. Roll dough into small balls - I used a small cookie dough scoop {2 tablespoons} THEN cut the ball in half, roll into a ball
  7. Place on cookie sheet and flatten slightly
  8. Bake for about 6-7 minutes, depending on the size of your cookie
  9. Note: I under baked mine slightly so they were soft
  10. Cool completely
  11. Color frosting in desired colors
  12. Fill a decorator bag, fitted with a #12 Tip
  13. Pipe frosting on the bottom of 1 cookie, around the edge
  14. Top with another cookie and add sprinkles

Isn’t it the cutest thing ever?? I know…I say that every month! But, Charlotte from The Paper Cupcake does amazing work!! AND, there are TWO sets of Bunting Flags…one that says “Lucky” on them for St. Patrick’s Day and the other is Rainbow Colors…Charlotte is just AWESOME like that!
