Mini Caramel Apple Pizza

It’s that time of year…Apple Season! Because of the warm temperatures in early Spring, and then a blast of cold, our apple orchards here in Northwest Indiana are suffering a bit. But we did manage to pick some delicious apples yesterday. If you love Apple Desserts, stay tuned…because all this week I’m sharing delicious, mouthwatering recipes with you!

Many moons ago, one of my favorite desserts while attending a Pampered Chef party was the Taffy Apple Pizza. Made with a sugar cookie crust, peanut butter cream cheese spread, apples, caramel and chopped peanuts…this Fall treat is sure to be a hit!

Now, although I loved having a large cookie with all the yummy toppings, I thought it would be fun to make a small version so that everyone can enjoy their own, and so Mini Caramel Apple Pizza was born…

You can use your favorite sugar cookie recipe, or do like I did and buy a package of Nestle’ Sugar Cookie dough. I actually grabbed it a little while back for Fruit Pizzas, which never got made, so I decided to use it up instead.

Oh how I love this season…apples, pumpkins, caramel, gingerbread, cranberries…the list goes on and on!

Mini Caramel Apple Pizza

Mini Caramel Apple Pizza

Yield: 16 servings with a whole pizza or 20-22 mini pizzas
Prep Time: 10 minutes
Cook Time: 12 minutes
Total Time: 22 minutes

A favorite Fall treat. Recipe from HoosierHomemade.com

Ingredients

  • 1 {16 1/2 oz} package Nestle' Sugar Cookie Dough {or your favorite homemade sugar cookies}
  • 1 {8 oz} package cream cheese, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup peanut butter, creamy
  • 1/2 teaspoon vanilla
  • 3 apples, peeled and sliced thinly
  • 1/4 cup caramel topping
  • 1/2 cup peanut, chopped

Instructions

  1. Preheat oven to 350 degrees and spray a cookie sheet with non-stick cooking spray
  2. Shape cookie dough into a ball, roll out into a large round circle. Either bake the cookie whole, or use a cookie cutter to make mini pizzas.
  3. Bake about 10-12 minutes or until golden brown.
  4. Meanwhile, soften cream cheese and add brown sugar, peanut butter and vanilla. Beat until smooth.
  5. After the cookies are cooled, spread with cream cheese mixture
  6. Peel and slice apples and arrange on top of the cream cheese mixture
  7. Heat caramel topping in the microwave for about 30 seconds, drizzle over apples and top with chopped peanuts

    THANK YOU for having an apple recipe without cinnamon! We love apples in our house but we have a kid with a severe cinnamon allergy, so we can’t have it in the house at all.
