Mini Apple Spice Cupcakes for Back to School

We are getting closer…school starts next week for our boys. Although I’m not really looking forward to it {and I’m sure the boys aren’t either}, I am looking forward to getting back on track with a better schedule.

For the next couple of weeks, I will be sharing Back to School Cupcakes that you will have fun creating with your kiddos or bake up a batch for the teacher. There will also be some in Cupcake Chronicles Newsletter, as well as the monthly free printables.

I’m kicking off this Back to School Cupcake series with these fun little Mini Apple Spice Cupcakes, the cake is moist with a trio of  spices; cinnamon, nutmeg and ground cloves add a hint of Fall flavor. They are frosted with Brown Butter Cream Cheese Frosting and an apple made with a gum drop and tootsie roll.

Since I’m way overdue on a How To Cupcake Video for you, I thought these would be fun to share.

Here is what you will need for the Candy Apples

Candy Apple Supplies:

  • Red gum drops
  • Green gum drops
  • Tootsie Rolls
  • Toothpicks
  • Small knife {not shown}

These Apple Spice Cupcakes would also be great to include in your child’s lunchbox. I actually liked them better without the frosting.

Mini Apple Spice Cupcakes

Mini Apple Spice Cupcakes

Yield: 36-42 mini cupcakes
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

A delicious cupcake that would make a perfect back to school treat or lunchbox dessert. Recipe from HoosierHomemade.com

Ingredients

Cake

  • 2 cups flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/2 cup butter {I use I Can't Believe It's Not Butter}
  • 1 cup sugar
  • 1/2 cup brown sugar, packed
  • 4 eggs, room temperature {place in bowl with hot water for a few minutes}
  • 1 1/2 cups applesauce
  • 1 cup chopped pecans or walnuts

Brown Sugar Cream Cheese Frosting

  • 1/2 cup butter, softened
  • 8 oz. cream cheese, softened
  • 1 cup brown sugar, packed

Instructions

Cake

  1. Preheat oven to 350 degrees. Line mini muffin tin with cupcake liners
  2. Whisk together dry ingredients. Set aside
  3. In a large bowl, cream together sugars {white & brown} and butter.
  4. Add eggs, one at a time, beating after each addition
  5. Add applesauce
  6. Add flour mixture
  7. Mix just until combined after each addition
  8. Stir in nuts
  9. Divide into cupcake liners by adding about 1 tablespoon of batter into each
  10. Bake for about 8-10 minutes or until a toothpick inserted in the middle comes out clean

Frosting

  1. Cream all ingredients until light and fluffy
  2. Fit decorator bag with Round Tip #10 or #12
  3. Fill with frosting and pipe on small amount
  4. Top with Candy Apple

    These came out fantastic! Love the flavor. I was looking for a recipe that didn’t use grated apples since I was making huge quantities for the school bake sale. ( I only frosted half the batch and left out the nuts to avoid allergy issues.) The applesauce worked perfectly! However since they were a bit dense and stayed moist on top, I would call them more of a breakfast-style muffin, not really what I think of as a cupcake.
