Mexican Lasagna and our Menu Plan

Does your family love Lasagna? How about Mexican? Why not combine the two? We usually have a Mexican meal once a week, in fact most of the time I add it on Wednesdays on our Menu Plan.

So, when Collective Bias asked me to shop for and create an Ethnic Dish with some ConAgra products, it was a no brainer! The hard part was deciding which recipe I wanted to cook. My inspiration for the Mexican Lasagna came from Myra over at My Blessed Life.

I made salsa by simply combining Rotel Tomatoes with Green Chilies and Hunt’s Diced Tomatoes. Doug enjoyed eating it with chips too.

Mexican Lasagna

Total Time: 40 minutes

Combine the family favorite dinner of lasagna with the flavors of Mexico to create a delicious Mexican Lasagna - recipe from HoosierHomemade.com.

Ingredients

  • 1 pound ground beef
  • 1 small onion
  • 2 garlic cloves, crushed
  • 1 package Taco Seasoning
  • 1/2 cup water
  • 2 tablespoon Parkay margarine
  • 1 container of Cottage Cheese
  • 1 can Rosarita Refried Beans
  • 1 can Rotel with green chilies
  • 1 can Hunt’s Diced Tomatoes
  • 6 tortillas {corn or flour}
  • 2 cups shredded Mexican cheese
  • Pam Cooking Spray

Instructions

  1. Cook and drain ground beef, set aside.
  2. In a small bowl, combine Rotel Tomatoes and Hunt’s Diced Tomatoes to make salsa.
  3. Melt Parkay and saute onions and garlic.
  4. Add ground beef back to pan.
  5. Add about 1/2 of the can of Rosarita Refried Beans, 1 cup of salsa mixture, taco seasoning and 1/2 cup of water.
  6. Stir well and simmer on stovetop until heated through and flavors are combined {about 10 minutes}.
  7. Spray 13×9 pan with Pam cooking spray and layer tortillas.
  8. Place 1 full tortilla in the middle and then cut 2 tortillas into quarters and place on the ends to fill in. Add half of the meat mixture, top with 1 cup of Cottage Cheese and 1 cup of Mexican Cheese.
  9. Repeat layers.
  10. Bake at 350 degrees for about 30-40 minutes or until cheese is melted and bubbly.
  11. Let set about 5 minutes, then serve with sour cream or other toppings.

  1. I’ve one question not regarding Mexican Lasagna (it looks very tasty) but the weekly plan menu. Do You make this plan every week or it’s only for testing purposes?

    I’m new on our site maybe there’s an answer on site :).

  4. That Mexican Lasagna looks so amazing!! Seriously, I may not be able to wait until next week to add it to my menu – it will either have to bump the taco cups off the menu or maybe we can live on the wild side and have Mexican food twice in one week.
