This week, I have a challenge ahead of me, can I feed my family for $50. I usually have $100 per week budgeted for groceries, but this week, we had an unexpected expense with basketball, so money is tight. I am a big Aldi’s shopper, and usually buy everything there except for what is on sale at Kroger. Here is our meal plan for this week:
Monday ~ Tuna Casserole
Tuesday ~ Crockpot Chicken
Wednesday ~ Breakfast
Thursday ~ Chicken N’ Noodles
Friday ~ Stromboli
Saturday ~ Shrimp Fettucine Alfredo
Sunday ~ Leftover Buffet
It has helped quite a bit that I had meat in the freezer that I had bought on sale a couple weeks ago. I also have 2 tubes of pizza crust that I bought with a coupon while they were on sale, making them $1.08 per tube. We had pizza last week, so I thought I would try something new with the crust for this week.
Here are the recipes:
Tuna Casserole
Shell Macaroni (or elbow)
1 can Cream of Celery Soup
1/3 c. Milk
1/4 c. Mayo
1/2 t. Mustard
1 c. Shredded Cheese
1 can Tuna
Boil macaroni and drain. Mix soup, milk, mayo and mustard. Stir in cheese and tuna. Fold in macaroni.
Combine 1/4 c. bread crumbs and 1 T. butter and sprinkle over casserole.
Bake 45-50 minutes at 350
Crockpot Chicken

Chicken N’ Noodles
1-2 bags of noodles (depending on family size)
2 cans Cream of Chicken Soup
1 can Milk
Boil noodles. Cut up leftover chicken, mix in soup and milk, add noodles.
