One of the things I like most about cooking a big holiday dinner, is all the leftovers. And since I have lots of ham and eggs, I’ve decided to switch up my menu a little for this week, instead of sticking to my April Menu Plan. I am going to use some of the recipes that I found for this post on Stretching Easter Dinner.
Monday ~ Breakfast – Baked Brunch Omelet from All Recipes.com
Tuesday ~ Ham & Scalloped Potatoes
2 boxes of Betty Crockers Scalloped Potatoes with chopped ham in them
Wednesday ~ Fried Egg Sandwiches, Mashed Potatoe Patties, veggie
Thursday ~ Chef Salad from Kraft.com
Friday ~ Enchilidas (can’t have ham and eggs every day)
Saturday ~ Aloha Ham-wiches and Stuffed Potatoes from Kraft.com
Sunday ~ Grill Out, thinking about these Chicken Phillies from Forever Wherever, they look so good

Last week I told you about how busy of a week we were going to have, well not only did we celebrate Andrew’s 18th Birthday, have Spring Break and Easter, I also had the flu for 4 days. So, our meals didn’t go quite as planned. I’m totally considering working on a bunch of freezer meals, just for this type of situation.
Here is a re-cap of what we did have, and what I spent.
Monday ~ Homemade Pizza $4.75
Tuesday ~ Leftovers $-0-
Wednesday ~ Chicken N’ Noodles $6.80 (lots of leftovers, and chicken left for another meal)
Thursday ~ Leftovers for Doug and I, Casey had a Happy Meal $4.00
Friday ~ Pizza (I know, again, crust was on sale last wk. at Kroger) $3.00 (used leftover chicken to make BBQ Chicken Pizza)
Saturday ~ Stuffed Baked Potatoes $2.50
Sunday ~ Easter Dinner $ 13.50 (tons of ham for leftovers)
Total ~ $34.50

We are stretching Easter dinner too except we had a turkey! I am off to read your post on stretching it out though..that is great!
