Homemade Apple Cinnamon Marshmallows

Ah…Homemade Marshmallows…they are pretty much a little bite of heaven! Nothing compares to the fluffy, soft, whipped pillows of sugar of a Homemade Marshmallow! Except maybe a flavored marshmallow like Apple Cinnamon!

While I’ve made Homemade Marshmallows a couple times before, I’ve never ventured into the world of flavoring the marshmallows. Then a couple months ago, I spotted Marshmallow Madness by Shauna Sever and everything changed. I seriously wanted to run home and start cooking marshmallows…different flavors, different shapes or even some that were filled.

If you have never made marshmallows before, don’t be like me and add these to your “to do” list for several years before gathering up your apron strings and giving them a try! They really aren’t as difficult as you might think.

Many cooks that have made marshmallows often stress that you need a stand mixer to make them. I’m absolutely sure that a stand mixer would be great for making marshmallows, but I’m here to tell you my friends, I don’t own a stand mixer and these marshmallows were made with my hand mixer. You may have seen a couple photos on Instagram when I was making them.

One of the things I love most about Homemade Marshmallows is sharing them with others and have them be totally blown away by the fact that you can actually make them at home, in your kitchen, by your little ol’ self, and have them be amazing!

Homemade Apple Cinnamon Marshmallows

Homemade Apple Cinnamon Marshmallows

Ingredients

  • 4 1/2 teaspoons unflavored gelatin {I used a little more than 2 enveloped of Knox brand}
  • 1/2 cup unsweetened apple juice concentrate
  • 1/4 cup cold water
  • 3/4 cup sugar {white, granulated}
  • 1/2 cup light corn syrup, divided
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • Classic Coating for dusting - 1 1/2 cups powdered sugar + 1 cup cornstarch

Instructions

  1. Get all your supplies out ahead of time. Have the mixer ready, spatulas {2 or 3 of them is good}, 8x8 pan lined with wax paper or molds if you are using them and candy thermometer.
  2. In a small bowl, whisk together the gelatin, apple juice concentrate and cold water. Let set 10 minutes.
  3. In a medium saucepan, stir together sugar, 1/4 cup corn syrup, water and salt.
  4. Bring to boil over high heat, stirring occasionally until it reaches 250 degrees
  5. In a large bowl, {from your stand mixer if you have one}, add 1/4 cup corn syrup.
  6. Microwave the gelatin/apple juice mixture for about 30 seconds and pour into the large bowl, over the corn syrup.
  7. Beat on low, after the corn syrup mixture on the stove has reached 250 degrees, slowly pour into the bowl, continuing to beat.
  8. Beat for 5 minutes at medium speed, increase to medium-high and beat for 3 more minutes.
  9. Turn the mixer to high and beat for 2 minutes, during the last minute, add the cinnamon.
  10. The finished marshmallows should be tripled in volume.
  11. Spoon marshmallows into 8x8 pan. Let set for 8 hours in a cool, dry place.
  12. Remove from pan, cut and toss in Classic Coating

Notes

You can also make Grape Marshmallows, substitute the Apple Juice Concentrate for Grape, and add vanilla instead of cinnamon.

Be sure you have all your equipment and supplies ready, marshmallows are not difficult, but they move really quickly and it's much easier to have everything ready and within reach.

  1. It is exciting to be able to make my own marshmallows. It is also exciting to see the sifter that I dream of owning. I love that sifter. It reminds me of my Granny and my Grandma. 🙂

  2. Hi, Can I confirm that step 7 in your directions you are referring to the corn syrup mixture from the medium pan? Its a little confusing as you say beat it but if its heating then I cant use my stand mixer… im probably being very silly, but Id love clarification. 🙂

    1. Hi Nicola, there are 2 different amounts of corn syrup, the first 1/4 cup is on the stove heating to 250 degrees, the second 1/4 cup is the amount that you poured into your mixer bowl. The beaters are on low, mixing the corn syrup in the bowl, then you pour the mixture from the stove slowly into the bowl.

        1. They will keep in a air tight container for up to 2 weeks, 1 week is perfect, but 2 works well also. Glad to help!
