Green Velvet Cupcakes for St. Patrick’s Day

Just like the ever so popular Red Velvet, these Green Velvet Cupcakes have a chocolate flavor but are a festive green color for St. Patrick’s Day. Added to the top is a shamrock made from my favorite Candy Clay

Easy enough for a St. Patrick’s Day treat yet impressive enough to serve at a party, these cupcakes are sure to have guests green with envy! Starting with a box mix, you can’t get easier than that. I used Decorator Icing on them, however Buttercream Frosting would be delicious too! And of course a Candy Shamrock on top!

We have used Candy Clay several times. And honestly, I can’t express enough my love for how easy it is to use. You do need to plan ahead and mix it several hours or the night before, but other than that, it’s perfect to use for decorating cupcakes, cakes and desserts.

And better yet – it taste good…really good!

Green Velvet Cupcakes for St. Patrick’s Day

Yield: 20-24 cupcakes
Prep Time: 10 minutes
Cook Time: 12 minutes
Total Time: 22 minutes

Ingredients

Cupcakes

  • 1 yellow cake mix
  • 4 eggs
  • 1 cup buttermilk
  • 1/3 cup oil
  • 1/3 cup cocoa
  • Green coloring {add a little at a time until you get the color you want}

Candy Clay Shamrocks

Instructions

  1. Preheat oven to 350 degrees, place liners in cupcake pan
  2. Mix all ingredients until well combined
  3. Fill cupcake pan and bake for 10-12 minutes or until a toothpick inserted comes out clean
  4. Cool completely
  5. Frost with your favorite frosting
  6. Add Candy Clay Shamrocks and Sprinkles

  1. Quick question–Can I use white cake mix for this? I happen to have some that I won’t use and would hate for it to go to waste

    1. Hi Layla, yes you can use a white cake mix. The yellow cake mix gives it a little more “velvety” flavor, but white is fine.
