This cake is one of those “go to” recipes that I make often. Even though most of my baking is from scratch, it’s always good to have a few recipes that are quick and easy. And of course, taste great. This cake starts with a cake mix, and just a few more ingredients makes it taste like it was baked from scratch.
I originally found this recipe, shared by an Amish cook that writes a column for the newspaper in a nearby town. She used it as a Coffee Cake, but I have always served it as dessert. Either way, Graham Streusel Cake is sure to please your family.

Ingredients:
- 1 Yellow Cake Mix plus ingredients on box (oil, eggs & water)
- 1 1/2 cups Graham Cracker Crumbs
- 3/4 cup Brown Sugar
- 3/4 cup Walnuts or Pecans, chopped
- 1 1/2 teaspoon Cinnamon
- 2/3 cup Butter or Margarine, melted (I use a little less)
- 1/2 cup Powdered Sugar
- 1 tablespoon Milk
Directions:
Combine Graham Cracker Crumbs, Brown Sugar, Nuts, Cinnamon

Mix in Butter or Margarine until well combined, set aside.

Prepare Cake Mix according to directions on box. Pour half the batter into a greased 13 x 9 pan. Sprinkle half of the Graham Cracker mixture on top of cake batter.

Carefully spoon remaining batter on top and sprinkle with remaining Graham Cracker mixture. Bake at 350 degrees for 40 – 45 minutes or until golden brown. Test with a toothpick inserted in the middle. Cool completely.

Combine Powdered Sugar and Milk to make glaze for cake. Dribble with spoon over cooled cake.

This cake is very good without the glaze too.
