Frozen Watermelon Slices

The easy, breezy and oh so hot days of Summer are upon us. It’s been over 90 here for several days now, and while I’m not complaining because I love it this way, it’s pretty hot to heat up the oven to bake.

So what better treat to make then one that you can whip up and stick in the freezer. These cool and creamy Frozen Watermelon Slices are perfect for those hot Summer days, a fun weeknight dessert, or even for your Fourth of July Celebration.

These Frozen Watermelon Slices have actually been on my to do list for longer than I can remember. Many moons ago, I bought a small booklet, Simple Desserts made with COOL WHIP Whipped Topping, and have used it more times than I can count. Most recently I shared the Flower Pot Pie and Dessert Grillers.

With only a few ingredients, the Frozen Watermelon Slices are a cinch to make, they did take some time because each layer is frozen, but they were super easy.

Let’s get started…

Step 1:

  • Line a 1 1/2 quart glass bowl with plastic wrap. Divide an 8 ounce tub of COOL WHIP in half and add a few drops of green food coloring. Mix well and then line the bottom and sides of the bowl. Freeze for at least 30 minutes.

Step 2:

  • Add the remaining COOL WHIP, spreading evenly on the bottom and sides. Freeze for at least 1 hour.

Step 3:

  • Soften Strawberry or Raspberry Sherbet {I bought a quart and used about 3/4 of it}, chop chocolate into pieces {I used a Hershey chocolate bar, you can also use chocolate chips} Fold into softened sherbet and spoon on top of COOL WHIP layer. Freeze for at least 4 hours.

To serve, invert bowl onto a cutting board, remove bowl and plastic wrap. Run a large sharp knife under hot water and cut in half, and then into pieces. Serve immediately, store leftovers in freezer.

Ingredients

  • 1 tub {8 oz} COOL WHIP Whipped Topping, thawed
  • 3-4 drops green food coloring
  • 1 quart Raspberry or Strawberry Sherbet
  • 1 chocolate bar, chopped or 1 cup chocolate chips

Instructions

  1. Line a 1 1/2 quart glass bowl with plastic wrap
  2. Divide COOL WHIP in half and color 1 half with green coloring, mix well and add to bowl, spreading evenly on the bottom and sides
  3. Freeze for 30 minutes
  4. Add the remaining COOL WHIP, spreading evenly
  5. Freeze for 1 hour
  6. Soften Sherbet slightly, you will need about 3/4 of the quart
  7. Chop chocolate and fold into sherbet
  8. Spoon into bowl
  9. Freeze for at least 4 hours
  10. To serve, invert bowl onto a cutting board and remove plastic
  11. Run a large sharp knife under hot water and cut in half, then cut slices, and cut those in half
  12. Serve immediately
  13. Store leftovers in the freezer
