Time is growing close…do you know what you are baking for Father’s Day? No? Well I have you covered…these Fresh Strawberry Tarts are easy and sure to be a hit with Dad, Grandpa and your hubby!

Growing up my Dad had the most amazing Strawberry patch. I vividly remember him on his hands and knees picking quarts and quarts of berries for my Mom to bake up a Pie, make some Freezer Jam or simply eat fresh from the patch.

I miss those days when life seemed to be much easier, a relaxing afternoon under the Maple Tree or a walk to the beach. These Fresh Strawberry Tarts definitely takes me back to those easy days of Summer.

Fresh Strawberry Tarts

Fresh Strawberry Tarts

Prep Time: 20 minutes
Cook Time: 7 minutes
Total Time: 27 minutes

Delicious Summer treat. Recipe from HoosierHomemade.com. Adapted from Pillsbury

Ingredients

  • 1 box refrigerated pie crusts {or make your own}
  • Sugar for sprinkling on crust

Filling

  • 2 1/2 cups fresh strawberries, sliced thin
  • 1/2 cup strawberry glaze
  • Hot Fudge Ice Cream Topping, optional
  • Whipping Cream or Frozen Whipped Topping, thawed

Instructions

Tarts

  1. Remove pie crust from packaging and let softened according to directions on box
  2. Roll out and sprinkle with sugar
  3. Using a 4 inch round cookie cutter, cut pie crust
  4. Preheat oven to 400 degrees, and spray the bottom of a muffin pan {you will use every other cup} with non-stick cooking spray
  5. Fit rounds, sugared side up, alternating over the cups. Pinch together sides around each cup and prick generously with a fork.
  6. Bake 5-7 minutes or until golden brown. Cool 5 minutes, remove from muffin pan and cool completely.

Filling

  1. Slice strawberries and fold in glaze. Refrigerate for about 30 minutes.
  2. Just before serving, add 1 tablespoon hot fudge topping {if desired}, spoon in strawberries.
  3. Top with whipped topping or whipping cream

Notes

Liz says...If you don't have a cookie cutter 4 inches, use a cup or glass, that's what I did.

  2. Get another plate out for lunch tomorrow!! I think if I can avoid all the black/whites I could make it before lunch is over LOL I was going to make freezer jam this year, it’s the only kind I really, really like, but at $24 a flat, I don’t think I will. Not a typo! $24/flat!!! You will only get any of my strawberries if you are a VERY special person !!!

    I have now frozen all of my strawberries. Can I thaw some out and use them in the strawberry tart recipe or will they be too mushy? Thanks so much.

    1. They should be okay, I would serve them immediately though, they may make the crust soggy.
