Happy Tuesday my friends! We continue our Fourth of July Celebration today with a treat the kids {and adults} are sure to LOVE…Firecracker Push Pops! Red and Blue Cupcakes, White Frosting with a little sprinkle of Pop Rocks make these treats go…snap…crackle and POP!

The Cupcake Push Pop possibilities are endless! I just love how easy they are to put together too! You may also like the other Push Pops that I shared…Orange Creamsicle, Irish Cream and S’More Push Pops…such fun!

Let’s chat about the Pop Rocks for a bit…these came from Party City, we have a new store near us that has the coolest candy selection I’ve seen in awhile. Pop Rocks are little bits of candy that explode in your mouth and come in a variety of flavors. I used Tropical Punch for the blue and Strawberry for the red.

Fun for kids and adults. Recipe from HoosierHomemade.com

Ingredients

  • 1 box white cake mix plus ingredients to make it taste more like homemade
  • Wilton Royal Blue Coloring
  • Wilton No-Taste Red Coloring {no taste is important because red coloring can be bitter}
  • White Frosting - I used Wilton Decorator Icing
  • Pop Rocks in Strawberry and Tropical Punch
  • Red Licorice
  • Push Pop Containers {available online}

Instructions

  1. Combine cake mix, eggs, buttermilk and oil and mix well
  2. Preheat oven to 350 degrees
  3. Spray cupcake pan or you can bake in a square cake pan
  4. Divide batter into 2 bowls
  5. Color one portion red and another blue
  6. Bake cupcakes 12-15 minutes for until a toothpick inserted comes out clean
  7. Cool completely

Assemble Push Pops

  1. Using the Push Pop container as a cutter, cut the cupcakes to size, trim with a knife if necessary
  2. Fill a decorator bag with white frosting
  3. Place a red cupcake in the Push Pop container, pipe in frosting, add a sprinkle of Pop Rocks and repeat with blue cupcakes. Top with more Pop Rocks and a small piece of licorice for the wick.
