Filled Cupcakes

One of my favorite desserts to make and eat, are cupcakes that are filled. 

First start with baked cupcakes of your choice…

Then use an apple corer to core out the center, insert directly in the middle and wiggle a little, twist to remove.

I fill the chocolate cupcakes with chocolate pudding mixed with Cool Whip. After you spoon the filling in, cut off a portion of the plug and replace it in the cupcake.

Then frost as usual. This is the recipe I used for the frosting…

Buttercream Frosting

1 c. Butter

6-8 c. Powdered Sugar

2 t. Vanilla  ( I used a little more)

1/2 c. Milk

Pictured above in the first photo are the chocolate cupcakes, I also made Butterfinger cupcakes.  I used yellow cake, and used a straw to core the center because I didn’t want it really big.  After each cupcake I just snipped off the straw end.

Then I squirted Caramel Ice Cream Topping in the center, I did not replace the plug because the hole was so small. I frosted them, drizzled them with caramel topping and sprinkled with chopped butterfinger candy bars.  We now have a new favorite, these are sooo delicious!

  • Yum! I make mine in a slightly different way. While they are still hot, I use the long tip on my decorator, and I pipe filling directly into the centers of the cupcakes. The hot cake squishes around and slightly melts the frosting. It’s delicious. :)

  • Wow! I am a cupcake freak, so these really make me want some right now! I’ve never tried to fill any of mine because it didn’t sound too easy…until now. Thanks for the help and the wonderful food post for Tasty Tuesday!

  • I was going to make the cupcakes w/the filling,but I could not find anything to take out the center, so I made a cake(I know not the same); however I made the icing and it turned out good for my first time.
    I had some left over and wanted to try to save what was left if I could. I put it in a ziplock last night. Thanks for a quick response.

    @nancy, Next time, if you don’t have an apple corer to take out the center, you can use a straw depending on your filling or a small spoon. Cake is always good too.
