You are sitting quietly, enjoying your favorite magazine, when the phone rings…it’s the neighbor…they thought maybe it would be fun to come over to see you. Or the ever popular “Mom, I forgot to tell you” quote from the kids that need a treat for the classroom party…tomorrow!
While it’s great to be prepared with homemade treats to serve to the neighbors or take to the classroom party, sometimes {a lot of the time} it simply doesn’t work like that. At least in our house it doesn’t!
So what is a Mom to do? Smucker’s Ice Cream Toppings to the rescue! Even though we all love offering an Ice Cream Sundae Bar, I thought this time, we would jazz it up a little with these Easy Ice Cream Sandwiches!

Take a close look, my friends! These are NOT your normal, every day Ice Cream Sandwich…nope! They are extra special…but SUPER easy!

Easy Ice Cream Sandwiches
- Cookies from the store bakery – we used chocolate chip and sugar
- Ice Cream – we used vanilla and Amaretto Cherry Cordial
- Smucker’s Ice Cream Toppings – we used Hot Fudge, Hot Caramel, Strawberry and Blueberry
- Cool Whip whipped topping
- Sprinkles if you like
Instructions
- Remove Ice Cream from the package and let soften about 5 minutes
- Using a large knife, cut slices of ice cream about 1/2 inch thick
- Cut ice cream with a round cookie cutter or scoop
- Flip cookie over and add ice cream
- Add a couple spoonfuls of Smucker’s Ice Cream Topping
- Top with another cookie
- Place in freezer
To make an extra special dessert, add a spoonful of Cool Whip to the top of the cookie, drizzle with Smucker’s Hot Fudge and Caramel Toppings, add sprinkles if you like.

The flavor combinations are endless depending on the flavor of Ice Cream, the cookies and the Smucker’s Ice Cream Toppings.
