I hope you still have room on your Easter Dessert menu to add one more treat! This Lamb Cake is simply adorable. I remember years ago the star of every Easter Dessert table was a Bunny Cake. So when I spotted the Chubby Little Lamb Cake in a cookbook, I thought he would be fun to share with you!
He’s not difficult to make, but did take some time. Our family doesn’t like coconut, so I coated the Lamb Cake with White Chocolate Curls that I made with Wilton Candy Melts. The body is baked in a large bowl, two small bowls for the head and mini cupcakes for the top of the head, nose and tail. The face and ears are made with Starburst candy and M&M’s for the eyes, and a pretty ribbon to get him all ready for Easter Dinner.
How to make Chocolate Curls:
- Add 1 package of Wilton white candy melts and 2 tablespoons shortening to a medium bowl
- Melt in microwave about 2 minutes, stir candy until smooth
- Add a piece of parchment paper to a square dish
- Pour melted candy into dish and place in freezer for about 15 minutes
- Remove and let set out a couple minutes
- Using a potato peeler, shave off chocolate to form curls
- Store in fridge until ready to use

- Note: The size of the bowls you use will depend on what size cake you want to make
- Add cake mix to large bowl and combine with eggs, milk and oil {learn what I add to make it taste more like homemade}
- Spray an oven-proof bowl with non-stick cooking spray for the body, 2 small bowls for the head and mini muffin tin
- Divide batter - you will need 5 mini cupcakes
- Bake and cool completely - baking time will depend on the size of bowls you are using, insert a toothpick into the center of the cakes to test
- On a serving platter, place the body. You will probably need to trim the flat side to make it even.
- Coat with small amount of frosting
- Frost the 2 pieces for the head and place together
- Trim cupcakes so they are flat. Frost and add 3 to the top of the head, cut side down and 1 for the nose.
- Coat with small amount of frosting
- Add the last mini cupcake for the tail, and frost
- Now, go over the entire cake with another layer of frosting. It doesn't have to be perfectly smooth because you will be covering it with chocolate curls or coconut

- Flatten with your fingers, and cut 2 triangles for the ears, a small triangle for the nose and a small mouth
