CocoCrazy Cake with Marshmallow Cream Cheese Frosting
Lately I have been on a bit of a coconut kick…I think because it seems tropical and I am in full “tropical” mode.
I mean, summer is finally here and I am going to enjoy it…here in NJ it only lasts a little while, so live it up folks!
You can catch me at any moment during the day sipping my Diet Coke out of a hurricane glass with a little umbrella, doing the laundry in my grass skirt or “lei”ing anything that walks through my door. hehe.
Ok-none of that’s true. I live in a small town and people talk. Bus-stop gossip is real.
I can already hear it now:
“Did you see her get her mail in that coconut bra?”
“I saw her trying to hula dance by her kiddie pool”
“I’m pretty sure there is a totem pole being whittled by the side of her house”
“Oh, her poor kids”
So, while I keep my luau contained to the kitchen…here’s a fun and easy cake.
Get your coconut bras on people…you’re gonna need them!
Coco-Crazy Cake with Marshmallow Cream Cheese Frosting:
2 1/2 cups AP flour
2 tsp baking powder
1/2 tsp salt
1 cup sugar
2 cups shredded sweetened coconut flakes
2 large eggs
1 1/4 cups milk
2 tsp vanilla extract
1/3 cup melted butter
1 cup Marshmallow Creme
1 lb sifted powdered sugar
1 8 oz. block of softened cream cheese.
1/4 cup shredded sweetened coconut flakes for garnish
Preheat to 350
Grease an 8×8 square pan
Whisk together flour, baking powder, sugar and coconut. Set aside.
In medium bowl whisk eggs together, add milk and vanilla and whisk to combine.
Making a well in center of flour mixture, add melted butter first and then remaining wet ingredients. Using a wooden spoon fold until just combined.
Pour batter into prepared pan and bake approx 35-40 minutes until middle is set and toothpick comes out clean.
Cool in pan for 10-15 minutes and then transfer to cooling rack.
In mixing bowl, using hand-held mixer combine softened cream cheese and marshmallow creme, about 1 minute.
When thoroughly combined add in sifted powdered sugar and mix until smooth on med-high speed.
When cake is completely cool, frost.
I frosted only the top of the cake, but feel free to frost the entire thing…it’s up to you! Garnish with reserved coconut.
